Ingredients:Cake-Batter-Chocolate-Chip-Cookies-by-Sallys-Baking-Addiction-12

  • 1 ¼ cup all-purpose flour
  • 1 ¼ cup vanilla boxed cake mix
  • ½ teaspoon baking soda
  • ¾ cup unsalted, softened butter
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • 1 egg at room temperature
  • 1 ½ teaspoons vanilla
  • 1 cup chocolate chips
  • ½ cup sprinkles

In a big bowl, sift the flour, cake mix, and baking soda together. Set that aside. Then, use a mixer to cream the softened butter and both sugars together on medium until it is smooth. Then add in the egg and mix it on high for 1 minute. Scrape the sides down and add the vanilla, then beat it on high until combined. Add the flour mixture and mix on low-medium speed until combined. Add the chocolate chips and sprinkles and mix together. Cover the bowl with plastic wrap and put in the refrigerator for 2 hours. Preheat the oven to 350 and line two large cookie sheets with parchment paper. Scoop rounded balls of the cold dough onto the baking sheet and press a few chocolate chops into the tops.  Bake the cookies for 10-12 minutes or until the edges are slightly browned. Allow them to cool on the baking sheet for 4 minutes then transfer them to a wire rack to cool.

Grab a cold glass of milk and enjoy!

In Illinois, where I live, summers are H.O.T. The best and most enjoyable way to cool yourself down and beat the heat is to grab a cold treat! Here is one of my favorite sweet summer indulgences that cools me down when the Illinois inferno gets the best of me…Popsicles that taste like cake!FunfettiCakeBatterPopsicles_2

Ingredients:

  • 3 cups of vanilla ice cream
  • 3/4 cup yellow cake mix
  • 2 tsp vanilla extract
  • 1 cup milk
  • 1/2 cup sprinkles

In a blender, combine the ice cream, vanilla extract, cake mix, and milk. Blend on medium until it is smooth. Pour the mixture into a bowl and mix in the sprinkles. Next, pour the mixture into popsicle molds and freeze for four hours or more. When you are ready to gobble these sweet treats, run the mold under warm water for about 30 seconds to loosen the popsicles out of the molds.

Eat up!
