The way to a boy’s heart is through food. Okay, the way to MY heart is through food, who am I kidding. If you are looking for a totally adorable yet delicious homemade Valentine’s Day gift for the people you love, make them these sweet Oreo heart truffles!

Ingredients:Oreo-Truffles-Valentines-Hearts-2

  • 24 Oreos, finely crushed
  • 5 oz. softened cream cheese
  • 12-14 oz. white chocolate or vanilla almond bark
  • Heart shaped sprinkles (optional but highly recommended ;))

Line a cookie tray with baking paper. Crush the Oreos until they are fine crumbs and mix them in with the softened cream cheese. Do this with your hands or the back of a spoon. When it is all well combined transfer it to the baking paper and spread it in an even layer, about ½ inch thick. Put the cookie sheet in the freezer for 45 minutes or more and then use a heart shaped cookie cutter, then freeze them for about 25 minutes. Line another baking sheet with baking paper, then place the hearts from the freezer and dip them in the white chocolate using a fork. Tap off the extra chocolate, then lay them on the baking tray and sprinkle them with the sprinkles. Work in small batches so the hearts don’t thaw! Store these in the fridge until you give them away! That is, if you don’t eat them all yourself. 😉

What is your favorite Easter treat? Is it Robin’s Eggs? Jello salad? Peeps? Mine would have to be Rice Krispies Easter Eggs. They are easy to snack on and a big hit at my family’s Easter gatherings. Here is how to make my favorite Easter indulgence!

Ingredients:

  • Rice Krispies cereal
  • Mini marshmallows
  • Butter
  • Food coloring

To make your eggs different colors you will need to make 4 different batches of Rice Krispie mixture. For each separate batch, melt 2 tablespoons of butter and 2 cups of mini marshmallows in a medium sized pan over medium heat. Stir it constantly until the marshmallows are completely melted, then add a few drops of food coloring and mix it in well. Turn the stove off, then add 2 cups of Rice Krispies cereal, mixing it in well. Let it sit for 4-5 minutes, then slather your hands in butter. Make sure they are nice and greasy to keep the marshmallow from sticking to you, then grab a handful of the treat mixture and form it into an Easter egg shape. Let the eggs cool on wax paper, then serve or store in an airtight container until you are ready to serve them.

St. Patrick’s Day is only a couple weeks away, and I don’t know about you but I think it’s such a fun holiday to celebrate!  This year, I’ve looked up…

St. Patrick’s Day is only a couple weeks away, and I don’t know about you but I think it’s such a fun holiday to celebrate!  This year, I’ve looked up different festive recipes and so many of them make the use of Lucky Charms.  They’re so creative and yummy!  Here are a few Lucky Charms snacks and treats that make celebrating St. Patty’s Day ten times better.

  • Lucky Charms Dirt Cake.  Chelsea Crockett - Lucky Charms CupcakeIf you’ve had dirt cake, then you know just how good it is.  All you need to make is vanilla pudding and add food coloring to make it green.  Then, in a large glass bowl, fill in a layer of pudding, whip cream, then lucky charms… and repeat! It looks and tastes great!
  • Lucky Charms Cupcakes.  This recipe is extremely simple!  Just make a fresh batch of cupcakes, ice them, and finish them off with some Lucky Charms like the picture on the right!  You can make different designs out of all the different marshmallows!
  • Green Lucky Charms Pancakes.  When I was little, my mom would always make me a full green breakfast for St. Patrick’s Day.  If you want green pancakes, put food coloring in the batter.  Add some whip cream to the top followed by a sprinkle of Lucky Charms!  They’re perfect for the occasion! 🙂

Easter is a wonderful time to whip up some tasty treats in the kitchen!  With all the festivities going on, why not bring the perfect dessert to your Easter occasion.  I’ve got a few creative and delicious treats that everyone will love.  Plus, they’re easy to make!

Who doesn’t love chocolate covered strawberries?!  I can’t get enough of them!  A twist on the classic chocolate covered strawberry is to turn them into carrots!  Start by melting down white chocolate, using a small dab of vegetable oil, and adding orange food coloring to it.  Fully dip each strawberry in the orange chocolate so only the stem shows.  Finish them off by drizzling the extra chocolate you have over the strawberries with a spoon.  They’ll look exactly like little carrots!  They’re the perfect grab and go dessert.   Chelsea Crockett- bunny tails

Another one of my favorite Easter desserts are bunny tails.  All you need is an 8-ounce package of cream cheese, 4-5 cups of powdered sugar, 1 teaspoon of almond extract, and a bag of shredded coconut.  Begin by softening the cream cheese and beating it until it is fluffy.  Slowly add the powdered sugar in, while mixing, until it becomes dough.  Once the dough becomes thick, roll it into 1-inch balls, and roll them into the coconut.  These can be served room temperature or chilled.  Enjoy!

If you browse through my website, you’ll be sure to find out that I love food…especially sweets! Whenever I have free time, I love to try out new baking recipes for fun! While it may seem easy, baking can be hard sometimes! I even mess up the box directions! By observing my mom and my own mistakes, I figured out the way around some of the most common…and not some common, baking mistakes. Let’s make the best cake ever!Chelsea Crockett- baking mistakes

  • I love love love fruit! If you’re making a cake or cupcakes with fresh fruit, roll the fruit through flour to keep each piece from sinking to the bottom.
  • Melting chocolate chips can be hard! Microwave chocolate pieces with vegetable or canola oil for short amounts of time, stirring in between. Chocolate can burn very easily! (I’ve done this too many times.)
  • Only fill cupcake cases 2/3 high to leave room for rising! They’ll turn out to be the perfect size!
  • Don’t put too many things in your oven! This causes the baking time to be longer, which may result in over-baked or burnt goods!
  • Test cakes right out of the oven by dipping a toothpick in the cake. If the toothpick is clean, then your cake is perfectly cooked!
  • To avoid your desserts from looking sloppy, make sure they are fully cooled before decorating or icing. I know it’s hard to be patient when it smells so good!!

Everyone knows the rule: don’t go on Pinterest when you’re hungry! Unfortunately, I’m now craving a chocolatey treat. I found a recipe for s’mores krispie treats and they look to die for! They’re simple to make and fun for a summer treat. Here’s what you need to know:

First comes first, ingredients… You’ll need 3 tablespoons of butter, a pinch salt, 5 cups of mini marshmallows, 6 cups of Graham cereal pieces, and 3 Hershey’s® chocolate bars. First off, melt the butter in a pot and stir in the salt. Chelsea Crockett - Smores Krispie TreatsStir in 4 cups of marshmallows in the melted butter until they’re completely melted as well. Take the pot off of heat and stir in the cereal and the extra cup of mini marshmallows. For the next part, make sure your Hershey’s® bars are broken into individual squares (it’s easiest to do this before you start the process to save time). Spray a pan with cooking spray and quickly pour in half of your mixture onto the pan. Add a layer of broken chocolate pieces on top of the mixture. Repeat this step again by adding the second half of the mixture followed by the rest of the chocolate pieces. Let it sit overnight or in the refrigerator for an hour.

Lastly, enjoy! YUM!

St. Patrick’s Day is just an excuse for lots of fun and good food! Whether you’re having a St. Patty’s class celebration or a party with your friends, you’ll need…

St. Patrick’s Day is just an excuse for lots of fun and good food! Whether you’re having a St. Patty’s class celebration or a party with your friends, you’ll need some themed, green treats to snack on. I’ve seen hundreds of ideas on Pinterest, but here are three that are not only delicious but simple as well!

  • Lucky Charm® Rice Krispie® Treats. These are so easy and fun to make! All you need is a recipe for homemade Rice Krispie® Treats. Then you can go one of two ways: either dye the butter green before mixing your ingredients or use green colored marshmallow (either way works!). After following your recipe but before separating them into squares, add in Lucky Charm® marshmallows! That’s all there is to it!Chelsea Crockett - Lime Sherbet Floats
  • Lime Sherbet Floats.  Since you’re going to have so many yummy treats, you’ll need something to quench your thirst. Lime sherbet floats will do the trick! All you need are a few cartons (or however many you need to serve your friends!) of lime, green ice cream. For the soda, pick whatever you like best! I prefer either 7-Up® or Sprite®. For tastiest results, use a lemon-lime flavored soda!
  • Rainbow Fruit Kabobs. Since I’m all for healthy treats, fruit kabobs are not only perfect for taste but decoration too! You’ll need these ingredients: purple grapes, blueberries, kiwis, pineapples, cantaloupe, and raspberries (or strawberries)! Stack them on wooden skewers in that exact order, like a rainbow (which is another St. Patrick’s Day theme!).

Cinnamon Roll-Ups

Do you have a loaf of white bread, some cream cheese, and sugar? If so, then you have dessert! If you need something quick and easy to whip together before a family gathering or party then try these puppies out! Who knew white bred could be transformed into something so delicious?

Ingredients:

  • 1 loaf white bread, crusts removedc1625404e90424d0e72960526cee0c60
  • 1 package softened cream cheese
  • 3/4 cup powdered sugar
  • 1 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup melted butter

 

Flatten the slices of bread with a rolling-pin. In a bowl, combine cream cheese and powdered sugar. In another bowl, combine sugar and cinnamon; set aside. Spread about 1 tablespoon of cheese mixture on each slice of bread. Roll up the slice of bread like a tube or a fruit roll up. Dip in melted butter, then in cinnamon-sugar. Place on an ungreased baking sheet. Bake at 350° for 20 minutes or until golden brown. This recipe makes about 16 rolls, so keep that in mind when you are trying to figure out how many you should make!

These are super tasty both warm AND cold! Bon Appetite!

It’s my favorite time of the year!  Falling leaves, cooler temperatures, and starlit nights by the campfire are something we all look forward to.  There’s nothing better on a chilly…

It’s my favorite time of the year!  Falling leaves, cooler temperatures, and starlit nights by the campfire are something we all look forward to.  There’s nothing better on a chilly night than making s’mores by the fire.  While melting marshmallows on a stick and putting them on a piece of chocolate between two graham crackers is divine…..there are other ways to enjoy s’mores too!

Chelsea Crockett - Smores BarIf a campfire isn’t available, another way to satisfy that s’more taste is with s’more bars like the ones on the left! They are gooey and rich and can be made ahead of an event.  You can google s’more bar recipes and find all different kinds.  If you keep them in an airtight container, they stay moist and last for days.

A healthier twist on s’mores is s’more candied apples.  Some people like that graham cracker taste but want to add some nutrition to their bite. In that case, s’more candy apples are the answer.  You can look up the exact recipe but basically it’s a Granny Smith apple on a stick dipped in marshmallow, chocolate, and graham cracker crumbles!  YUM!

July 4th is almost here and I’m sure many of you will be celebrating poolside or at the beach!  When my family gets together with friends, we like to get…

July 4th is almost here and I’m sure many of you will be celebrating poolside or at the beach!  When my family gets together with friends, we like to get creative with our red, white, and blue desserts!  They are fun to make and sometimes even healthier than the usual party cakes and desserts.  Here are a few ideas to help get your creative juices flowing.

One simple idea is to alternate cut up strawberries, bananas, and blueberries on skewers. Place the skewers on a fancy tray with some marshmallow/cream cheese dip.  It’s that healthy and that simple!

Another idea is to bake a cake (or brownies) in a 9 x 13 pan and ice it with white icing.  Place sliced strawberries in rows across the top.  Leave the top left corner open for some blueberries.  You now have a dessert that looks like an American flag! Chelsea Crockett - Fourth of July Treat

One of my favorite desserts is made in a truffle bowl.  You buy some angel food cake and cut it into cubes.  Place a layer of cake cubes in the bottom of the truffle bowl.  Add a layer of whipped cream, and then a layer or sliced strawberries and blueberries…..repeat layering until your bowl is filled.  Top with whip cream and a few decorative berries….easy and delicious!

Triple Chocolate Chunk Muffins.  Need I say more? 95 calories and more protein than fat? How perfect can muffins get? Stay tuned for the oh-so-yummy recipe!

                     

Ingredients:

1 3/4 cup

Oats

3

Egg whites

3/4 cup

Unsweetened cocoa

1/2 cup

Unsweetened applesauce

1 tsp

Vanilla extract

1/2 cup

Plain greek yogurt (or regular plain low fat yogurt)

1/2 tsp

Cream of tartar (or 2 tsp. vinegar)

1 1/2 tsp

Baking powder

1 1/2 tsp

Baking soda

1/4 tsp

Salt

1 cup

Hot water

1/2 cup

Baking stevia OR 1 cup sweetener of choice that measures like sugar1

1/2 cup

Semi-sweet chocolate chips

Tip

Foil cupcake liners, remove the inner paper lining (because paper liners tend to stick to muffins!)

1. Preheat oven to 350 degrees. Line a 12-cup muffin pan with foil cupcake liners, or spray muffin tin with non-stick cooking spray. Set aside.

2. In a blender, mix all of the ingredients together, except for the chocolate chips. Blend until oats are ground and mixture is smooth.

3. Place mixture in a bowl and gently stir in 1/2 of the chocolate chips (set the rest aside). Scoop mixture into prepared muffin pans.

4. Place muffins tins in the oven for 10 minutes.  After 10 minutes, remove muffins from the oven (but don’t shut oven off), and distribute the other half of the chocolate chips on top of each muffin.

5.Place the muffins back into the oven and bake for an additional 2-5 minutes, or until a toothpick comes out clean.

Cool muffins before removing from pan. ENJOY!

Thanksgiving is only a week away! It is time to start thinking of what yummy desserts you will be showing off to your family this Thanksgiving! Here is a kick booty recipe for some super cute turkey inspired cookies I found on the Pillsbury website, which is where I found the adorable picture! I tweaked the recipe a little bit to make it my own, so check it out!

Ingredients:

-1 roll (16.5 ounce package) of ready to bake refrigerated sugar cookies.

-1 container (16 ounce) creamy chocolate frosting.

-Candy cornTurkeySugarCookies

-Mini M&Ms

– Orange decorative frosting

Lets Bake!

The first step is to bake the sugar cookies as directed on their package. Once you have baked the cookies and have allowed them to cool down completely (about 10 minutes or so), spoon chocolate frosting into a 1-quart Ziploc baggy. Seal the bag and cut off a tiny bit of the corner of the bag. On each cookie, squeeze frosting on the outer edge of half of the cookie. Arrange candy corn over the frosting for feathers. Use the orange frosting to attach the mini M&Ms to the cookies for the eyes. Pipe the orange frosting onto the cookies to look like a nose and feet.

These cookies are sure to get tons of “oohs” and “aaahhhs”. Everyone will love these tasty turkeys! Happy Thanksgiving!

            Hey lovelies!  The Fourth of July is coming up which is a time when my family comes together and eats… a lot!  Whether you’re hosting a BBQ or kicking back and watching the fireworks, you’re going to need a few yummy desserts to share with your friends and family.  There are endless possibilities of what fun and creative desserts you could come up with, but here are a few snacks that are easy to make.

            Chelsea Crockett - Fruit KabobsBecause summer is a time to stay healthy and fit, try making fruit kabobs.  Since Fourth of July is all about red, white, and blue, you can use strawberries, bananas, and blueberries to make your patriotic kabobs!

            Another fun treat to play around with is chocolate covered pretzels.  For this holiday, you can make them patriotic by dying white chocolate blue and red.  Then, dip the pretzels in each color and add red, white, or blue sprinkles!Chelsea Crockett - Chocolate Covered Pretzels

            A quick creative side dish to make is white chocolate dipped strawberries!  Dip them about halfway in the chocolate then add some blue sprinkles on the tips.  They’re extremely simple and fun!
