Pumpkin Spice Puppy Chow

Puppy chow is probably on my list of top 10 favorite foods. Not even kidding. I cannot stop myself when there is a bowl of it in front of me. It just magically disappears. Since fall is upon us and everything is now pumpkin flavored, what sounds better than pumpkin flavored puppy chow? Not much. Not much at all. Here is how to make pumpkin spice puppy chow!

Ingredients:

  • 7-8 cups Cinnamon Chex cereal
  • 12 ounces orange candy melts
  • 3 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon allspice
  • 1 cup powdered sugar
  • 1-2 cups candy pumpkins

Pour the Chex cereal into a bowl and put to the side. Melt the candy melts for 20 seconds, stir, melt, and stir until they are melted. Stir 2 teaspoons of cinnamon, the cloves, allspice and nutmeg in to the candy melts until it is combined. Pour this mixture onto the cereal and stir gently to coat all of the squares. Be super gentle! Pour the powdered sugar and 1 tsp of cinnamon into a large Ziploc baggie. Pour in the coated squares and shake until they are all coated in sugar. Pour in the pumpkins and toss some more. Store it in an air tight container, or just eat them all right then and there! No judgments here.

Two things come to mind when I think about fall snacks: Pumpkins and s’mores. Why not combine the two for a sweet, festive goodie! I think these are great bonfire snacks, or something cute to make for your bf as a random treat!

Ingredients:

  • 1 can pure pumpkin
  • ½ cup butter, cut into pieces
  • ½ cup milk
  • 1 teaspoon ground cinnamon
  • 1 cup crushed graham crackers
  • 12 graham cracker squares
  • 2 cups miniature marshmallows (separated)
  • 1 1/3 cups semi-sweet chocolate chips

Preheat your oven to 450 degrees. Line a baking dish with foil. Next, heat the pumpkin, butter, milk and cinnamon in a small saucepan over low heat until the butter is melted and the mixture is heated. Stir in graham cracker crumbs. Remove from heat.

Lay out the graham cracker squares on the bottom of the baking dish. Spread half of the pumpkin mixture on top of graham crackers. Sprinkle 1 cup of marshmallows and 2/3 cup of chocolate chips over pumpkin mixtures. Spread remaining pumpkin mixture over marshmallows and chocolate chips. Sprinkle the rest of the marshmallows and chocolate chips. Bake for 3 to 5 minutes or until the marshmallows are golden. Let it cool, refrigerate for an hour, then enjoy!

I admit, I am a snacker. I have been on a really healthy roll, working out at a crossfit gym and eating healthy. But, snacking is my weakness. It is so easy to give in to cravings, especially when you have been trying to eat healthy and think that you deserve a “treat.” That is why I like to keep healthy treats around. I love salt and vinegar chips, they are tangy and have a great crunch to them. Here is a healthy version of my craving that you can make at home!

Ingredients:

  • 4 medium zucchini
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Preheat your oven to 225 degrees. Line baking sheets with parchment paper. Next, cut off the ends of the zucchini and slice them really thin. This will make about 5 cups of zucchini. Add the oil, vinegar, salt and pepper to a large bowl and whisk it together. Then add the zucchini to the bowl and gently coat them in the oils. Lay the slices on the baking sheets, spreading them out in an even layer. Bake the zucchini until it is brown and crisp. When you lift it from the baking sheet, it should not bend. This will take between 2 and 3 hours. When they are done, let them cool and then store them in an airtight container.

For those of you that just graduated high school, you will all soon be going your separate ways and following your different paths.  Whether your friends are going to college…

For those of you that just graduated high school, you will all soon be going your separate ways and following your different paths.  Whether your friends are going to college close to home or moving into a school across the country, everyone could use a college starter pack to take along with them!  It’s a perfect gift idea for upcoming grad parties. That being said, here’s what you’ll need to put in it!

  • Gum.  Chelsea Crockett - Freshman Starter KitOkay, but really… You can never have too many packs of gum, especially as a college student!  Having gum at-hand to pop in during class or after the dining hall is essential!
  • A pic of you and them.  Get your favorite picture of you and them developed for them to put it up somewhere in their dorm room.  You can even frame it so they can use it as decoration!
  • Advil.  This is essential considering your mom won’t be there to take care of you when you get sick!  It helps to start you off with some medicine in case you get a head or stomach ache.
  • An adhesive phone pocket.  If you don’t know what these are, they’re a stick-on pocket you stick to the back of your phone.  This is perfect for holding your dorm access keys, college ID, money, etc.
  • Microwavable meals/snacks.  These are crucial!  Having food you can make right in your dorm are one of the most important must-haves of college.  Late night snacks will come in handy!

This recipe combines two of my favorite sweet treats into one… Introducing puppy chow rice krispie treats! These treats are ooey, gooey, chocolaty and completely delicious. Here is the recipe!

Ingredients:

  • 2 tbsp butter
  • ½ cup peanut butter
  • 1 bag marshmallows
  • 2 cups chocolate chips
  • 6 cups crispy rice cereal
  • Powdered sugar for dipping

Take a 9×13 pan and line it with foil and spray it with non-stick spray. Place butter, peanut butter, marshmallows, and chocolate in a large bowl. Heat it in 30 second increments, and stir it between each time. Do this until the mixture is melted, then stir in the rice cereal. Pour this mixture into the 9×13 pan, pressing it in. Let it cool, then cut into squares. Place 1 cup of powdered sugar into a bowl and coat each square with powdered sugar.  Then enjoy!

I love this treat because it is quick and has no baking required. Also because it is totally YUM.

St. Patrick’s Day is only a couple weeks away, and I don’t know about you but I think it’s such a fun holiday to celebrate!  This year, I’ve looked up…

St. Patrick’s Day is only a couple weeks away, and I don’t know about you but I think it’s such a fun holiday to celebrate!  This year, I’ve looked up different festive recipes and so many of them make the use of Lucky Charms.  They’re so creative and yummy!  Here are a few Lucky Charms snacks and treats that make celebrating St. Patty’s Day ten times better.

  • Lucky Charms Dirt Cake.  Chelsea Crockett - Lucky Charms CupcakeIf you’ve had dirt cake, then you know just how good it is.  All you need to make is vanilla pudding and add food coloring to make it green.  Then, in a large glass bowl, fill in a layer of pudding, whip cream, then lucky charms… and repeat! It looks and tastes great!
  • Lucky Charms Cupcakes.  This recipe is extremely simple!  Just make a fresh batch of cupcakes, ice them, and finish them off with some Lucky Charms like the picture on the right!  You can make different designs out of all the different marshmallows!
  • Green Lucky Charms Pancakes.  When I was little, my mom would always make me a full green breakfast for St. Patrick’s Day.  If you want green pancakes, put food coloring in the batter.  Add some whip cream to the top followed by a sprinkle of Lucky Charms!  They’re perfect for the occasion! 🙂

What is your favorite candy bar? One of my absolute favorites is Snickers The best way to watch a movie is with a bucket of popcorn, so at your next movie marathon or dorm room movie night, make your friends some Snickers popcorn!

  • 8 quarts of popped corn
  • 1 cup of salted butter
  • 2 cups of packed light brown sugar
  • 1 teaspoon salt
  • ½ cup of light corn syrup
  • 1 teaspoon baking soda
  • 1 cup of salted peanuts
  • 30 “fun size” Snickers bars, chopped
  • 3 ounces melted semi-sweet chocolate

Preheat your oven to 200 degrees. In a saucepan over medium heat, boil the butter, brown sugar, salt and corn syrup for 5 minutes. Remove the mixture from heat and stir in the baking soda. Pour the mixture over the popcorn and stir it so that it covers all of the corn. Spread some wax paper onto the counter and then pour the coated corn onto the wax paper. Sprinkle the peanuts on top and then transfer it into a roasting pan and bake for 1 hour, stirring it every 15 minutes. When you remove it from the oven, stir in the chopped Snickers and put it back in the oven for about 3 minutes. Remove the popcorn from the pan and then spread it onto the wax paper to cool. Drizzle melted chocolate on top of it, and then store it in a container until you and your friends are ready to devour it!

Popsicles are my favorite summer snack.  Whether you want sweet, fruity, or chocolatey, you can find a popsicle to satisfy your craving!  I’ve came across a few mouthwatering recipes that…

Popsicles are my favorite summer snack.  Whether you want sweet, fruity, or chocolatey, you can find a popsicle to satisfy your craving!  I’ve came across a few mouthwatering recipes that look absolutely delicious that I wanted to share with all of my fellow popsicle lovers!

  1. Tutti-Frutti Ice Pops.  For these you’ll need: a ½ cup of sliced strawberries, a ½ cup of sliced peaches, a ½ cup of blueberries, 2 sliced kiwis, and 1½ cups of coconut water.  You’ll need six ½-cup popsicle molds to divide your fruit among evenly.  Pour in the coconut water, place in popsicle sticks, and freeze your pops for 5+ hours. Chelsea Crockett - Nutella Pops Then enjoy!
  2. Sweet Tea Pops.  This may be the simplest treat to make.  All you need is to purchase your favorite sweet tea (mine is Gold Peak!) or make your own.  Then pour it into the molds, set popsicle sticks in, and set them in the freezer for a few hours!  So simple yet so delicious!
  3. Nutella Cool Whip Popsicles.  All you need for these is: a ¼ cup of Nutella, 1 cup of milk, and 1 cup of cool whip.  Combine the milk and cool whip together in a mixer then whisk in the Nutella.  Pour them into the mold, place in the popsicle sticks, and freeze for 6-10 hours!

Side note: If you’re having trouble getting the popsicles out of the mold, run cool water over the frozen popsicles or run warm water over the back of the mold.  Both should help your pops slide out much easier!

Midnight snacking is one of my weaknesses. I am usually up pretty late at night finishing up homework or editing videos, and my tendency is usually to go down to the kitchen and grab myself a yummy late night snack. The problem with this? The later at night you eat, your body is more and more likely to store those calories as fat. Eating healthy midnight snacks can help keep you from consuming unnecessary calories!

  1. Greek yogurt: Instead of reaching for the pint of ice cream in your freezer (although very tempting!), grab some sweet, cool Greek yogurt. Top it with frozen berries or honey to add some pizazz to it!greek-yogurt-1
  2. Air-popped popcorn: Instead of reaching for a bag of potato chips, although crunchy and very satisfying, opt for air popped popcorn. Add some salt and a smidge of butter to make it taste just like bagged microwave popcorn, but with much fewer calories.
  3. Almond butter and apples: Peanut butter contains healthy fats, but it is also packed with calories. Get the same nutty, rich flavor from almond butter, and dip slices of your favorite type of apple in it! Salty AND sweet.
  4. Chocolate: Yes, chocolate! But the RIGHT kind of chocolate. Two squares of dark chocolate are sure to satisfy your sweet tooth and have way less sugar and more antioxidants.

Grapes are the perfect snack to take to school with you. They aren’t messy, they are easy to grab and go, and they are tasty! Want to make them even tastier? Toss Nutella and nuts into the mix! Here is how to make tasty Nutella grape bites that are perfect for school lunches, snacks, and even great to take to friend’s houses! The best part is…they only take 5 minutes to make!!

Ingredients:

  • Bag of green grapes
  • Nuts (any kind you want. I prefer pecans!)

Wash your grapes and then let them dry. Dip the bottom half of each grape in the Nutella, and then roll them in the crushed nuts. I like to freeze my grapes after that to make them a cool treat, but you can store them at room temperature if you prefer! These are a great when you just want a “pop” of dessert and need a quick way to satisfy your sweet tooth.

Your friends will be swiping these out of your backpack once they see you with these tasty treats!

Christmas time is here! I repeat, CHRISTMAS TIME IS HERE! And with Christmas come delicious treats. Today’s delicious Christmas-themed sweet is holiday popcorn that will remind you of the Grinch himself!

  • Microwave popcorn
  • 3 cups mini marshmallows
  • Blue and yellow food coloring
  • Another 1/2 cup mini marshmallows
  • Red M&Ms

Pop your microwave popcorn, and once it is done pull out all of the un-popped kernels. Next we make the marshmallow mixture. Melt ¼ cup of butter in a saucepan, and once it is melted add the 3 cups of marshmallows. Stir together until they are melted, and turn the heat off. Add 2 drops of yellow food coloring, mix until it is bright yellow, and then add a small drop of blue. Stir it until it turns green, then pour this mixture over the popcorn. Gently mix it in slowly until the popcorn is mostly covered. Cover a cookie sheet with foil, then pour the popcorn mixture onto it. Drizzle some of the marshmallow mixture over it so the M&Ms and marshmallows have something to stick to, then sprinkle ½ cup of mini marshmallows and M&Ms onto the popcorn. Allow it to cool, then eat up!

Your friends will love this festive treat fit for a Christmas movie night.

No Bake Cheesecake Balls

Are you craving cheesecake but don’t have the time to go through the whole process of going to the store, finding all of the ingredients, putting them all together, baking them, and then finally getting to enjoy it? Well you are in luck, because I have a simple, easy recipe for delicious raspberry cheesecake balls that don’t require any baking and you probably already have the ingredients in your fridge! Curious? Read on!

Ingredients:

  • 12 oz fresh raspberries, washed and dried
  • 2 8 oz pkgs cream cheese, softened
  • 2 Cups cool whip
  • ⅓ Cup sugar
  • 1 sleeve graham crackers

Place the cream cheese and sugar in a bowl and whip with a hand mixer. Add the raspberry in and stir to combine. You want the raspberries to break up and mix with the cream cheese. Add in the cool whip and stir in with a spoon until they are just combined. Place in freezer for 2 hours. Crumble up your graham crackers however you see fit and place them in a bowl. With a spoon portion out dollops of the cream cheese mix one at a time into the bowl of graham cracker crumbs. Roll the cheesecake ball around in the crumbs using a spoon and place on a sheet tray lined with wax paper. After you’re done rolling the balls place the trays in the freezer for a couple hours until they get frozen. Put them in a Ziploc and take on out when you need a nice sweet treat to nibble on.

Studying requires one very important resource. Two words. Power snack. What else can motivate you to plow through those 4 pages of geometry homework? Whether I am studying or editing, I always need a trusty power snack by my side to keep my brain and body fueled. Here are a few of my favs!

  1. Frozen yogurt blueberries: These bite size treats are perfect because they are easy to pop in your mouth and are totally tasty.study HERE is the recipe!
  2. Toasted pumpkin seeds: Fall = pumpkins. Pumpkins = an abundance of pumpkin seeds. Pumpkin seeds are packed with zinc and boost memory, which just miiiiight give you a bit of a test-cramming advantage. 😉 HERE is the recipe.
  3. Veggies and hummus: I have recently rediscovered my love for hummus. I love dipping baby grape tomatoes and carrots in my hummus! This snack is high in protein so it will give you energy for hours.
  4. Banana hotdogs: Take a wheat tortilla, coat it with almond butter, and wrap a banana inside of it! This snack is easy to transport if you need to take it on the go to the library or a friend’s house for a study sesh, plus the bananas pack lots of energy-boosting carbohydrates!

Like I said earlier, is there any better study motivation than tasty snacks? My guess is no. 😉

College dining halls can be a bit of a letdown. I mean, nothing beats momma’s cooking! One way to make the food more bearable is to build your own concoctions out of it! Here are a few ways you can make college food your own.

  1. Ice Cream Creations: Pretty much every college dining hall has a soft serve machine. And most have a cereal bar. What does fca99fa70641549749a95e8daf0c26f22dfedd40_600this mean? Endless ice cream toppings! Cocoa Puffs, meet vanilla ice cream.
  2. DIY Trailmix: Take a plastic baggie with you when you go to the dining hall to eat and fill it with chocolate, nuts, dried fruit, and seeds from the salad bar and ice cream bar. Mix all of your findings and take them to class for a snack! Genius!
  3. Pizza Bagel: Microwave a toasted bagel with sauce from the pasta line and cheese from the salad bar! Deeeeelish!
  4. Ice Cream Floats: Ice cream machine? Meet soda fountain. Endless ice cream floats = heaven.
  5. Breakfast Burrito Bliss: Combine scrambled eggs with cheese and beans from the salad bar to concoct yourself the ultimate breakfast burrito!

 

There is no shame in getting creative with cafeteria food! You gotta make the best with what you’ve got to work with. 😉

If you follow me on any social media accounts, you’ve probably noticed that I travel a lot!  Although I hit up the airport quite frequently, it’s easy to forget about…

If you follow me on any social media accounts, you’ve probably noticed that I travel a lot!  Although I hit up the airport quite frequently, it’s easy to forget about all the rules and regulations, or leave an important item at home.  I recently came across some great airport hacks that I turned into a list to keep me on track during all my ventures.  Keep these amazing hacks in mind during your next airport adventure! Chelsea Crockett- airport bag for liquids

  • Many airports have started requiring small zip lock bags to hold all of your carry-on liquids. Keep multiple baggies in your purse and carry-on for the future!  I’ve forgotten this step many times!
  • I always get thirsty on a plane, but don’t feel like buying a $7.00 water bottle! Throw an empty water bottle into your carry on and fill it up when you see a water fountain.  If you’re a frequent traveler like me, you’ll save lots of money!
  • Bring your own snack! If they aren’t already opened, they’re good to go!
  • In the winter I always worry about my luggage being overweight, since winter clothes are so much heavier! Wear your heaviest items, like a big coat, tall boats, and jeans on the plane!  This way, you’ll save some extra weight for a little shopping! 😉 haha.
  • Collect unused toiletries from the hotel. They’re great for carry-ons!
  • Did you know that your birthday, an anniversary, or even traveling alone can give you free perks?! Just let someone working for the airlines know and you may get upgraded, get a free snack, or get a little gift.  It’s worth a try!
  • If you’re flying into a country without data, download the Google maps offline app so you’re never stranded!
  • Airports are one of the easiest places to catch germs. Keep hand sanitizer or wet wipes on hand!

Healthy Homemade Berry Popsicles

Summer is so close I can almost taste it… that is the endless amount of ice cream and popsicles I’m going to eat! Oops! I searched on Pinterest for a recipe that would give me a great tasting popsicle that wouldn’t make me feel guilty after eating it. Soooo… here is an amazing recipe that you can easily make at home!

First, you’ll need to purchase a popsicle mold for your treats to freeze in. Then, while you’re at the store, pick up your favorite kind of yogurt Chelsea Crockett - Berry Popsicles(it can even be Greek!). I suggest a simple vanilla, low-fat kind. It’s healthier and you won’t have to worry about the taste of your fruits clashing with it. Next, grab about three different types of fruits. The recipe on Pinterest calls for strawberries, kiwis, and blueberries, but you can substitute something out for any of them!

Lastly, slightly fill your molds with a little yogurt and slide down whatever fruits you want in each. Let them freeze for a few hours (I prefer overnight) and then you can dig in! You can even serve them with granola for some extra flavor!
