Summer is all about staying fit and eating right.  This is a hard thing to do when your pantry is filled with lots of salty snacks!  What you might not know is that there are many healthy alternatives to substitute for chips and other treats that taste just as good and benefit your body!

Chelsea Crockett - Sweet Potato Chips  Although chips are very delicious, they definitely aren’t the best thing for you.  Instead of potato chips, try sweet potato chips.  They are a high source of vitamin A and are much better for you than potato chips.  Along with their reduced fat, they are surprisingly very tasty! Another route to go would be rice cakes.  They contain less fat and less calories.

Most people find popcorn as a fattening and unhealthy snack.  But it’s not the popcorn that’s full of calories, it’s the toppings.  Toppings such as salt, butter, or cheese are full of fat and sodium.  As long as you stick with just the popcorn, or at least a small amount of toppings, it’s pretty much an all-around healthy snack.

Now anyone could have guessed these, fruits and vegetables.  Although they’re very different from chips, everyone needs their daily dose of nutrients and vitamins.  These are, of course, some of the healthiest foods you could eat.  Remember, an apple a day keeps the doctor away!

Are you looking for a low carb, refreshing springtime snack? Are you a lover of all things bacon lettuce and tomato related? Then you are going to love this next recipe! Introducing, the BLT lettuce wrap!

Ingredients:

–          2 whole Romaine lettuce leafs

–          Mayonnaise

–          1 thinly sliced tomato

–          4 slices of bacon

 1. Lay out your lettuce and spread each leaf with mayo.

2. Add the bacon strips, then layer on the tomato slices, and then top with the other 2 slices of bacon!

3. EAT UP!

 This recipe can be enjoyed for breakfast, lunch, or dinner! It is super great for you, and if you want to cut some calories out of the equation substitute avocado for mayo! If you are trying to cut carbs out of your diet then this recipe is just the ticket! Usual BLTs require bread, but not this one! This combo is totally guilt free J.

     Some of you may have tried Chex’s “Muddy Buddies” snack, but have you ever tried making something similar at home?  “Puppy Chow” is just as good, if not better, and a perfect treat for birthday celebrations or pool parties.

     To start off, you’ll need this list of ingredients:

 Chelsea Crockett - Puppy Chow

  • 1 bag of milk chocolate chips
  • 1 cup peanut butter
  • 1 stick of butter
  • 1 box of Chex rice cereal
  • ¾ of a bag of powdered sugar

 

 Now that you have got your ingredients, you’re ready to start the process.  Melt your bag of milk chocolate chips in the microwave for two minutes.  Make sure you put them in a microwavable bowl first.  Then in a large bowl, mix together the melted chocolate, 1 cup of peanut butter, and 1 stick of melted butter.  After they’re fully mixed together, pour this over the box of Chex rice cereal and stir until it coats the cereal.  To finish it off, sprinkle ¾‘s of a bag of powdered sugar until that coats it as well.  Once you’ve completed this, it’s time to chow on the “Puppy Chow”!

We’ve all learned about how healthy fruits and vegetables benefit your body in numerous ways.  But did you know some foods can benefit your body in different ways such as a brighter smile and healthier hair?  I like to call these “beauty foods”Wink.  Here are five of my favorites!Chelsea Crockett - Beauty Foods

  1. Apples and carrots are not only good for your body, but for your teeth, too!  The hardness of these foods causes you to chew longer and harder which helps remove the stains and bacteria on your teeth.  Nuts are also a good snack to help make your teeth shine.  They have certain minerals in them which are essential for teeth growth.
  2. For healthy hair, you need your vitamins!  Foods rich in vitamins such as blueberries, spinach, sweet potatoes, and chicken are all good for strengthening the strands of your hair in addition to making it look shinier and healthier!
  3. If you’re a fish eater, you’ve already got many benefits going for you!  Fish such as salmon is great for your skin and hair.  It makes skin look younger and healthier.  Who wouldn’t want that?
  4. If you wonder why your nailsChelsea Crockett - Dairy Products get dry and brittle, it’s probably because you’re not getting enough Vitamin B and calcium.  Foods rich in these include meat, eggs, cheese, and definitely milk!
  5. Does anybody else have those dark, puffy circles under your eyes?  Besides more sleep, a healthy diet can reduce those unwanted rings below your eyes.  Leafy green vegetables are the best way to do so.

Along with warm weather and hours of sunshine, summer brings along an endless amount of yummy, seasonal treats!  Although you can eat it year-round, ice cream tastes best when you’re by the pool or at a carnival.  Summer is also a time to show your creative side and try new things.  So why not try whipping up your own batch of ice cream?Chelsea Crockett - Ice Cream

          Homemade ice cream is pretty simple to make.  Plus, it provides an activity for you and your friends to do at home!  To make this happen, you’ll need 1 cup of milk, a 1/2 teaspoon of vanilla extract, 1 tablespoon of sugar, 4-6 tablespoons of rock salt, 2 trays of ice cubes, a small amount of butter, and 5 teaspoons of flavored syrup.  If you prefer chocolate ice cream, then add one tablespoon of cocoa powder.  To start off, take a quart-sized plastic bag and pour in the sugar, flavoring, and milk.  Then you’ll need your rock salt and ice, preferably crushed.  Put these into a gallon-sized bag and place your quart-sized bag into this one.  For fifteen to twenty minutes, gently shake and message the bag.  After this, remove the ice cream and enjoy!

It’s summer vacation! Just saying it makes me so happy J. I don’t know about you, but where I live it gets reaaally hot and humid during the summer. I saw this recipe the other day and decided to try it, and I was instantly in love! Today I am going to teach you how to make a super cool, refreshing, and healthy treat for those days when you can’t seem to cool down!

What is this treat I am describing? Watermelon sorbet of course! This is how you make it:

 You will need:

                        3 cups of watermelon
                        ¼ cup lemon or lime juice  

                        ½ cup water

                        ¼ cup sugar

                        A blender

 

What you do:

A couple hours (I recommend 3 or 4) before you plan to make the sorbet, cut up your watermelon into chunks. Put them in a large Ziploc bag and then put the bag in your freezer. Try and lay the bag flat and spread the watermelon evenly so they freeze faster. Next, after your watermelon has been freezing for 3 or 4 hours, boil the water, sugar, and lemon or lime juice until the sugar has dissolved. Then let this mixture cool to room temperature. Next, put your frozen watermelon and water mixture into your blender and blend it up! Make sure you blend it until it is a smooth consistency and there are no chunks. After that, pour your mixture into the bowl or container you will be serving or storing it in. Put this container in the freezer for another 2 hours, just to make sure your mixture is nice and firm before you serve it. Viola! Delicious, healthy relief from the summer heat. You can eat this sweet treat without feeling guilty because it has barely any sugar and it is all fruit!

     Just a quick tip for serving: if you are having a hard time scooping the sorbet, run your         spoon under warm water before scooping it out.

How many of you lovely ladies pack a lunch for school? Sometimes school lunches can be a little sketchy, you know what I mean? Tuna surprise? No thanks! Today I am going to give you some know-how on how to pack a nutritious, delicious lunch for school! There are 5 steps to packing a great lunch:

 Step 1: Starch + protein: Some easy, yummy options for this category are a turkey sandwich, a PB&J, hummus and crackers, a cheese quesadilla, and pasta with turkey.

 Step 2: Fruit: Some fruits that are great for lunches are apples, clementine, grapes, blueberries, and applesauce! All of these options are super portable and easy to pack up and go.

 Step 3: Veggies: Carrots, celery, salad, and snap peas are all yummy, easy to grab choices to throw in your lunch! Toss in some peanut butter to dip your celery in and you are good to go!

 Step 4: Snack: A few smart choices for this category are yogurt, string cheese, and granola bars!

 The last, and most important, item that should always be in your lunch is WATER! Never forget to pack a bottle of water with your lunch! Water, as you have heard from my previous articles, water is a vital part of every meal!

How many of you ladies love yourself a juicy Fruit Rollup? A Savory Fruit by the Foot? Some tangy Gushers? Well if you can say yes to any of the above, then tune it! Today I am going to teach you how to make healthy, homemade mango fruit rollups! The best part? There is no sugar, so you can feel great about snacking away on these yellow goodies!

 You will start out with 4 cups of diced ripe mangos. That is about 3 mangos. Preheat your oven to 175 and line 2 rimmed cookie sheets with parchment paper. Puree the mango in a blender or food processer until it is smooth.

Divide the puree evenly between the two cookie sheets. Use a spatula to spread the puree as flat as possible until it is about 1/8th of an inch thick. Bake the mango for 3-4 hours. You will know the roll-ups are done when the puree is dry to the touch. If the bottom of the roll-ups is still wet after a while, flip them over and continue baking them until they are dried.

Remove them from the oven. Place a piece of wax paper on top of the roll-ups and peel the roll-ups off of the baking sheet. Cut the mango into long strips and then roll them up along with the wax paper in-between the rolls so that the mango does not stick together. Toss the rolls in a plastic baggy if you need an on-the-go snack or just munch on them at home! They are a great, fun, healthy snack when you want something sweet!

During the winter months, there is nothing tastier than a warm breakfast! Today I am going to teach you how to make a totally mouth-watering breakfast perfect for any winter morning! Introducing, French toast roll-ups!

Ingredients:

-8 slices white sandwich bread

– Softened cream cheese, diced strawberries, or Nutella

– 2 eggs

– 3 tablespoons milk

– 1/3 cup granulated sugar

– 1 heaping teaspoon ground cinnamon

– Butter, for greasing the pan

1. Take the soft white bread and cut the crusts off. Use a rolling pin and flatten the bread out.

2. After you have flattened the pieces out, add whatever filling you want. I recommend sliced strawberries and softened cream cheese! You can even add Nutella, for you chocolate lovers!  Add the fillings to the end of the bread and roll them up!

3. Dip the rolls in an egg/mixture just like you would regular French toast. Brown them in a skillet and then roll them in cinnamon and sugar!

How easy was that?! I think I’ll go make some right NOW!

            Breakfast, it’s the most important meal of the day!  Starting your day off with a healthy meal is a great way to fuel your metabolism and get your day going.  Sometimes, it’s not always easy to make yourself a good breakfast when you you’re in a rush for school or work, but it IS possible!  Get rid of that boring cereal or granola bar and rethink breakfast with these new and creative ideas. 

            Toast is one of the most popular breakfast sides.  With so many topping choices, the variety is endless!  So what if you’re sick of the typical butter and jelly?  Try topping your toast with peanut butter and sliced bananas or any flavor of cream cheese with a handful of blueberries and strawberries.  Toast doesn’t have to be boring!

            If you like salty breakfasts try Egg Beaters!  It’s eggs already mixed up, so all you have to do is pour and cook!  They come in all different flavors including three cheese and southwest.  Try making an omelet stuffed with your favorite meat, veggies, and cheeses.  If you don’t have time to cook in the morning, make pre-made omelet muffins.  Start by greasing a muffin pan so the eggs don’t stick.  In a large bowl, whisk together the eggs and any toppings you would like, including meat, cheese, and veggies.  Fill each muffin cup evenly and bake at 350° for 20 minutes.  Now, you have breakfast ready in advance.  Just heat and enjoy!  Chelsea Crockett- omelette muffins

             Need a quick beauty fix, but don’t have time to run to the store?  No problem, just open up your fridge!  Surprisingly, your refrigerator is filled with fruits, vegetables, and other foods that can be turned into excellent beauty products.  Many fresh foods are packed with vitamins and minerals, which are perfect to apply to your skin.  See if the foods below are in your fridge and how they can be used!

Pineapples:  Bags under your eyes can leave you looking tired throughout the day and can totally mess up your makeup look.  Cut a slab of pineapple and place it under your eyes for 10 minutes.  The acid in pineapple will remove dead skins cells, leaving the skin looking brighter!

Carbonated Water:  This fizzy water is perfect as a final hair treatment and for removing split ends.  After conditioning your hair in the shower, rinse the conditionerChelsea Crockett- carbonated water out with the carbonated water instead of the shower head.  It’s quite the elegant hair treatment!

Honey:  Make your own hydrating shampoo with honey!  Mix 3 tablespoons of water with one tablespoon of honey.  This all-natural shampoo mixture will cleanse and hydrate your hair without all the suds. 

Pomegranates:  The juice in this fruit is filled with nutrients that help regenerate cells.  Blend the seeds and juice with almond milk for a refreshing lotion.  Massage the mixture onto your face, neck, and hands for a softening, glowing effect. 

Sweet Potatoes:  If your skin is feeling dull, boil and mash together a sweet potato to create a mask.  This mask will hydrate the skin and replenish it with minerals.

When I was a kid, I used to love applesauce! I still do! The best kind of applesauce is the homemade kind, the kind where you know all of the ingredients are all natural and there are no preservatives. Here is a super yummy, super healthy recipe so you can make your very own applesauce!

Ingredients:

  • 6 medium apples
  • 1/2 cup Water
  • 1 tsp. – 1 tbsp. Cinnamon
  • 1 tsp. Sugar
  • 1/2 tsp. Vanilla Extract

1.Peel and core the apples. Chop the apples you have cored into chunky pieces.

2. Place the apples in your crockpot. In a separate bowl, combine water, cinnamon, sugar, and vanilla. Pour the mixture over the apples in your crockpot, making sure the apples are evenly coated.

3. Put the lid onto the crockpot and cook the apples on low for 4 hours or until they are soft. Once they are soft, remove them from the crockpot and mash them with a hand masher if you want your applesauce to be chunky. If you want it smooth, mix it with a mixer!

Applesauce is the perfect after school or after practice snack! Satisfy your sweet tooth with this yummy treat! When your friends try it, you can tell them you made it from scratch. They will be SO impressed!

What are the two words every teenager longs to hear? “Snow Day”! As you have probably seen on my Instagram, it snowed in my hometown this week! All of the snow got me thinking about what you can MAKE with snow! Did you know that you can make ice cream out of snow? You totally can! Check out the recipe below and try it out!

Ingredients:

-1 gallon of snowchelsea crockett snow ice cream

-1 cup white sugar

-2 cups of milk

-1 tbs vanilla extract

 

So what you do is you take a big bowl outside with you and scoop some snow (about 2 gallons) into it! Make sure its clean snow, none of that yellow snow ;). Next, stir in the vanilla and sugar to taste.  Gradually stir in the milk so that it does not melt the snow. Once you have reached the consistency that you desire, serve it! This type of recipe should be served immediately after you make it because of the snow. That stuff melts FAST! And, snow ice cream is not really that good if you freeze it to use again. Next time it snows at your house, try out this super unique recipe!

Nutella is the best invention on the planet. It is chocolaty goodness! I found this recipe for homemade Nutella that is to die for. Read on, chocolate lovers!

Ingredients:

-1 cup hazelnuts

-12 ounces milk chocolate chips (melted in the microwave)

– 2 tablespoons vegetable oil

– 3 tablespoons powdered sugar

-1 teaspoon vanilla extract

-1/2 teaspoon salt

1. Preheat your oven to 350. Lay the hazelnuts on a cookie sheet and toast them for about 14 minutes. You will need to take the skins off of the nuts and toasting them helps the skins come off. Place the nuts into a towel and rub them until the skins come off. Let the nuts cool.IMG_5979

2. In a food processor, blend the nuts until the consistency is smooth. Add all of the ingredients except for the melted chocolate and blend everything together.  Add the melted chocolate and blend the mixture together. It will be a little hot and runny but it will firm up once you let it cool.

 Put the Nutella into a jar to store it. This recipe makes about 2 cups. Enjoy your homemade chocolaty goodness!

               Valentine’s Day is just around the corner!  It’s always fun to bake something creative for that special someone in your life.  It’s also fun to bake treats for others that you love like your grandparents, your friends, or even a teacher.  Below I’ve included three different goodies that would make anyone’s mouth water.
               I always love to bake heart shaped cut out cookies.  A relative’s sugar cookie recipe is the always the best way to go.  My family and I like to use different shaped sizes of hearts and decorate them with pink, red, white, and purple icing.  We top them off with sugar sprinkles.
              Another yummy idea is to bake a heart shaped cake!  You can purchase a heart shaped pan or two and bake a cake in them.  Chelsea Crockett - Rice CrispiesHave fun icing for decorating your cake.  This will show your “special someone” that you took the time to make something fun and creative.  And don’t forget delicious!  
               If baking is not your thing, you can always make some rice crispy treats on the stove top.  You can use a cookie cutter to cut heart shapes out of the treats. You can also use popsicle or lollipop sticks to slide into each snack.  Feel free to decorate the rice crispy treats with icing if you really LOVE sugar!  I hope these ideas will help you spread love this Valentine’s Day!
