Experts say that we should drink 6-8 cups of water every day. I don’t know about you, but that is pretty tough for me. Here is a sweet summer recipe to spruce up your water and make it more inviting: Watermelon coconut infused ice cubes! Your water will seem so much more fancy, and delicious, when you add in a few of these cubes. Plus, they add extra vitamins and minerals to your H2O! Ingredients:

  • 1 Cup seedless watermelon, pureed
  • 1/8 cup coconut water
  • 1 teaspoon lime juice

Combine these ingredients together and pour them into an ice tray. Freeze them until they are solid, possibly overnight, and then serve! These are sure to be a hit at any summer party, or just at home in a glass of water! Next time you reach for a sugary drink, pop a few of these in a glass of water instead.

During the summer, I am a fruit snacker. I love having fresh fruit around! If you want to work fresh fruits into your daily summer diet, try making this delicious, nourishing, homemade vitamin water! Unlike store-bought vitamin water, it has no added sugar or artificial sweeteners.

Ingredients:vitamin-water-1-0813

  • 2 cups cubed watermelon
  • 1 sliced lime
  • 1 sliced lemon
  • ½ sliced and quartered red grape fruit
  • 1 sliced medium cucumber
  • 12 mint leaves
  • 2 quarts water
  • ice

Combine the fruit, cucumber, mint and water in a large pitcher. Stick the pitcher in the fridge and let it infuse overnight. The next day, pour yourself a large glass over ice and enjoy! This simple and easy vitamin water is great to make just for you, or for a summertime party! It has a tons of nutrients and vitamins in it, so you can feel great while you treat yourself to this tasty drink.

Popsicles are my favorite summer snack.  Whether you want sweet, fruity, or chocolatey, you can find a popsicle to satisfy your craving!  I’ve came across a few mouthwatering recipes that look absolutely delicious that I wanted to share with all of my fellow popsicle lovers!

  1. Tutti-Frutti Ice Pops.  For these you’ll need: a ½ cup of sliced strawberries, a ½ cup of sliced peaches, a ½ cup of blueberries, 2 sliced kiwis, and 1½ cups of coconut water.  You’ll need six ½-cup popsicle molds to divide your fruit among evenly.  Pour in the coconut water, place in popsicle sticks, and freeze your pops for 5+ hours. Chelsea Crockett - Nutella Pops Then enjoy!
  2. Sweet Tea Pops.  This may be the simplest treat to make.  All you need is to purchase your favorite sweet tea (mine is Gold Peak!) or make your own.  Then pour it into the molds, set popsicle sticks in, and set them in the freezer for a few hours!  So simple yet so delicious!
  3. Nutella Cool Whip Popsicles.  All you need for these is: a ¼ cup of Nutella, 1 cup of milk, and 1 cup of cool whip.  Combine the milk and cool whip together in a mixer then whisk in the Nutella.  Pour them into the mold, place in the popsicle sticks, and freeze for 6-10 hours!

Side note: If you’re having trouble getting the popsicles out of the mold, run cool water over the frozen popsicles or run warm water over the back of the mold.  Both should help your pops slide out much easier!

My favorite post-workout snack is a protein shake. Not only do they taste good, they help me to replenish my energy and give my muscles the protein they need to help them become stronger. There are tons and tons of different protein shake recipes out there, but this one is my fav when I do a morning workout. It is a cinnamon roll protein shake! Who knew you could treat your body to some protein AND treat your taste buds to a cinnamon roll!Cinnamon-Swirl-Protein-Smoothie-41

Ingredients:

  • ½ cup almond milk
  • ½ cup water
  • 1 scoop vanilla protein powder
  • 1 tsp vanilla extract
  • 1 tsp butter extract
  • ¼ tsp cinnamon
  • Ice
  • Sweetener to taste

Put all of your ingredients to the blender and blend it all up.

How good does this sound!? I love how creative you can get with protein smoothies. Working out isn’t such a hassle when you know you get a sweet, protein packed reward after!

I love candy. That’s a fun fact about me. My favorite kind of candy, though, is sour candy. I have a weakness for everything sour, from gummy worms and beyond. I found a way to mix my love for soNational-Gummy-Worm-Day-2014ur candy with a refreshing way to stay cool this summer. Introducing sour gummy worm popsicles!

Ingredients:

  • Your favorite fruit juice
  • Sour gummy worms

Grab your favorite popsicle molds and get to work. Add worms to the molds and press them towards the bottom and sides of the molds. Freeze the molds ahead of time to help the worms stick better. Next, pour in your fruit juice of choice. Freeze these pops overnight, then take out and enjoy! Every bite is filled with fruity, sour goodness!

Ingredients:

  • 3 cups of vanilla ice cream
  • 3/4 cup yellow cake mix
  • 2 tsp vanilla extract
  • 1 cup milk
  • 1/2 cup sprinkles

In a blender, combine the ice cream, vanilla extract, cake mix, and milk. Blend on medium until it is smooth. Pour the mixture into a bowl and mix in the sprinkles. Next, pour the mixture into popsicle molds and freeze for four hours or more. When you are ready to gobble these sweet treats, run the mold under warm water for about 30 seconds to loosen the popsicles out of the molds.

Eat up!

When I think about summer snacks, fruit always seems to come to mind. A juicy, sweet piece of fruit always seems to hit the spot in the sweltering heat. If you are a fruit lover, and a snacker, then you will love this totally snack-worthy fruit salsa recipe! Plus, you can make cinnamon tortilla chips to dip into your sweet salsa. Delish!

Ingredients:

  • 2 cups pineapple chunksstrawberrypineapplesalsa2_bakedbyrachel
  • 2 cups chopped strawberry
  • 8 tortillas, 8 inches wide
  • 6 tablespoons unsalted, melted butter
  • 6 tablespoons granulated sugar
  • 1 ½ teaspoon cinnamon

Preheat your oven to 350 degrees, and line two baking sheets with parchment paper. Combine the cinnamon and sugar in a bowl and set it aside. Cut your tortillas into chip-sized pieces. Cut them like you would a pizza. Brush the pieces with melted butter and then sprinkle the cinnamon sugar on them. Bake them for 10-15 minutes, then transfer them to a plate to cool. In a big bowl, toss the pineapple and strawberry chunks. If you want, you can add a dash of sugar to this to sweeten it up a bit. Now all that is left to do is gobble this fresh treat up with your cinnamon sugar chips!

So yummy and so fresh!

As summer (and college) approach, I am actively seeking easy breakfast ideas that take a very short time to prep and are way delicious. This recipe I am showing you today knocks those two attributes out of the park! Here is a yummy, easy recipe for peanut butter overnight oats that is packed with protein and totally satisfying.

Ingredients:

  • ½ cup unsweetened plain almond milk
  • ¾ tbsp. chia seedsOvernight-Oats
  • 2 tbsp peanut butter or almond butter
  • 1 tbsp maple sugar or your preferred sweetener
  • ½ cup rolled oats

In a small bowl or a mason jar, add the almond milk, peanut or almond butter, chia seeds, and sweetener. Stir to combine, then add the oats and stir a bit more. Cover the jar or bowl with plastic wrap or a lid and then store in the fridge for 6 hours or more (preferably overnight). The next day, open up the lid to your delicious oats and add toppings like sliced banana or strawberries to top it off.

If you ever have a craving for something ooey, gooey, sweet and delicious, then these Rice Krispies are just what you need! They take one minute to make, you make them in the microwave, and they are just the right size for easy snacking. Here is how to make them!

Ingredients:

  • ½ tbsp. unsalted butterdownload
  • 4 large or ½ cup mini marshmallows
  • 1 cup of Rice Krispies cereal

In a coffee mug, microwave the butter on high until it is melted, then add in the marshmallows. Microwave them for 20 more seconds, make sure they don’t overflow! Remove from the microwave and stir until smooth, then stir in the cereal. Once it is well blended, you can enjoy your very own rice crispy in a mug! This recipe will be a hit when I’m in college and don’t have an oven at my disposal!

Have you had churros before? If not, your taste buds have never experienced pure joy. Churros are golden twisted rods of deliciousness that are rolled in cinnamon and sugar right after being fried. If you HAD had churros, you will vouch for me when I say they are a treat indeed. If you want to bring dessert to the breakfast table, try this take on churros for breakfast!

Ingredients:

  • Waffle mixCinnamon-Roll-Waffles-060-1-625x814
  • A dash of cinnamon (to put in the waffle mix)
  • 1 cup white sugar (for topping)
  • ¼ cup cinnamon (to use in topping)
  • ½ cup melted butter (for topping)

                                                                                                    

In a large bowl, mix up your waffle mix to the specifications on the box, then add in a few dashes of cinnamon. Set that aside, then grab a saucer and mix the sugar and ¼ cup of cinnamon together on it. This is your topping for the waffles! Heat up your waffle iron and spray it with non-stick spray. Cook the waffles until they are golden and crisp, and immediately pour the melted butter on each side of them and dip each side in the cinnamon/sugar mixture on the saucer.

This recipe id a deliciously sweet take on breakfast!

Summer is HERE! I am out of my mind excited! School is out, the weather is warm, and life is good. You know what else is good? A cold popsicle on a hot summer day. You know what isn’t so good? All of the sugars and preservatives in those popsicles. If you want a healthy, guilt free alternative that actually provides you with your daily dose of fruits, then look no further! Here is a recipe for blueberry pineapple popsicles. MMMMMMMmmmmm.

Ingredients:

  • 1 cup of blueberries91afc057d7ecc7d77adcfdd9725d60bc
  • 1 cup pineapple slices
  • 1 tbsp honey to sweeten
  • 1 cup of water
  • Popsicle molds, or Ziplock reusable popsicle bags

Combine all of the ingredients into a blender. Blend until they are liquefied, and then pour the mixture into your popsicle molds until they are ¾ of the way full. Freeze them overnight, then enjoy! If you are trying to make healthy choices this summer, replacing your store bought popsicles with these delicious dudes is a great way to start!

Pancakes, waffles, eggs, bacon….mmmm…You know what would make breakfast even better? Protein. Protein keeps you full and focused, which gets you off to a good healthy start. Here is a recipe for protein pancakes that is super easy and is bound to start your day off in the sweetest way possible!

Ingredients:

  • 2 eggs
  • 1/3 cup dry oatsprotein-pancakes-banana-oat
  • 1 scoop vanilla protein powder
  • 2 tablespoons unsweetened almond milk
  • ½ tsp vanilla extract

Whisk the liquid ingredients together, and then add in the oats and protein powder. Cook the pancakes on a heated skillet, about ¼ cup of pancake mixture for each pancake. This recipe should make about 4 pancakes.

Is there a food more fun than Funfetti? Doubtful. Is there a food more fun than cake batter Funfetti Popsicles? WAY doubtful. If you are in the summer snack spirit, take a swing at these sweet treats!

Ingredients:

  • 1 cup heavy creamFunfettiCakeBatterPopsicles_2
  • ½ cup, plus 2 tbsp powdered sugar
  • 3 tbsp powdered milk
  • ½ tsp vanilla extract
  • 1 ¼ cups whole milk.
  • ¼ cup sprinkles

In the bowl of your mixer, add in the heavy cream and powdered sugar. Whip until light and fluffy, which should take about 2 minutes. Next, add in the milk powder and vanilla and beat for another minute. Pour in the milk and mix it in until it is all well combined. Grab a popsicle mold and fill each compartment up about ¼ of the way full. Add some sprinkles to each, then fill up the molds ½ way, add sprinkles, and repeat the process until the molds are full. Insert the popsicle sticks into each, then stick them in the freezer until frozen completely. After they are frozen solid (about 6 hours), remove them from the molds and gobble them up!

On a warm spring/summer day, these hit the spot!

Ingredients:

  • 2 1/2 cups all-purpose flour
  • Dash of salt
  • 3 tsp. baking powder

  • 2/3 cup almond milk
  • 8 tbsp. cold salted butter
  • 1 tsp. oregano
  • 1 cup tomato sauce
  • 1 bag shredded mozzerella cheese
  • 1 bag pepperoni

Preheat your oven to 425 degrees. While it is warming up, grab a large mixing bowl and combine flour, salt, baking powder, milk, sugar, butter, and oregano. Stir all of this with a mixer until it is crumbly. Work the dough together using your hands until it makes a ball. Roll out the dough and cut it into triangles that measure about 4 inches on each side. Place ½ of the triangles onto a cookie sheet about 4 inches apart. Pour sauce, pepperoni, and cheese on top of each triangle. Then place the second triangle on top of the cheesed one and press the dough together to combine at the sides. Chocolate for breakfast. How heavenly does that sound? If it is done right, it can actually be a great healthy start to your day! One way is to make this deliciously creamy hot cocoa breakfast smoothie. It combines fiber, plant based protein, and wholesome ingredients to give you a sweet start to your day, Here is how to have chocolate for breakfast.

Ingredients:

  • 1 ¼ cup unsweetened vanilla almond milk
  • 1 tablespoon almond butterHot-chocolate-Smoothie-tall
  • 1 tablespoon maple syrup
  • ½ cup rolled oats
  • 1 tablespoons unsweetened cocoa powder
  • ½ teaspoon extract

The night before, add all ingredients to your blender and then stick your blender in the fridge overnight. In the morning, blend your ingredients on high until the oats are shredded and you have a smooth, creamy consistency. If you want to drink it cold, go for it! If you want it to be like hot chocolate, pour your smoothie into a small saucepan and cook it over medium heat. Add some chocolate chips if you want, and allow it to warm up. Once it is at the heat you desire, pour it into a heat safe glass and enjoy!

Making meals in a mug is one of my new specialties. One I think will come in handy in college when I don’t have an oven at my disposal! Today’s mug recipe is a deliciously easy take on French toast! It is super quick and super delish.

Ingredients:

  • 1 piece of buttered bread635775343617184105-853577182_216x216_Easy-French-Toast-Egg-Mug-Scrambler
  • ¼ cup milk
  • 1 egg
  • 2 TBSP of syrup
  • 1 tsp ground cinnamon
  • Pinch of salt
  • 1 TBSP of chocolate chips
  • Powdered sugar and cinnamon sugar (totally optional, but totally recommended!)

In a microwaveable mug, mix the egg, milk, syrup, cinnamon and salt until well combined. Cut the bread into squares that are bite sixed. Add the bread to the mug and press the pieced down so they are covered with the liquid. Add the chocolate chips to the mug and stir them into the bread mixture. Sprinkle the cinnamon sugar on top and then microwave the mug for 2 minutes, stopping every 30 seconds so it doesn’t spill over the mug. Let the mug cool about 1-2 minutes, then sprinkle powdered sugar on top.

Enjoy your easy peasy mug French toast!
