Two things come to mind when I think about fall snacks: Pumpkins and s’mores. Why not combine the two for a sweet, festive goodie! I think these are great bonfire snacks, or something cute to make for your bf as a random treat!

Ingredients:

  • 1 can pure pumpkin
  • ½ cup butter, cut into pieces
  • ½ cup milk
  • 1 teaspoon ground cinnamon
  • 1 cup crushed graham crackers
  • 12 graham cracker squares
  • 2 cups miniature marshmallows (separated)
  • 1 1/3 cups semi-sweet chocolate chips

Preheat your oven to 450 degrees. Line a baking dish with foil. Next, heat the pumpkin, butter, milk and cinnamon in a small saucepan over low heat until the butter is melted and the mixture is heated. Stir in graham cracker crumbs. Remove from heat.

Lay out the graham cracker squares on the bottom of the baking dish. Spread half of the pumpkin mixture on top of graham crackers. Sprinkle 1 cup of marshmallows and 2/3 cup of chocolate chips over pumpkin mixtures. Spread remaining pumpkin mixture over marshmallows and chocolate chips. Sprinkle the rest of the marshmallows and chocolate chips. Bake for 3 to 5 minutes or until the marshmallows are golden. Let it cool, refrigerate for an hour, then enjoy!

I just recently went out for sushi with the chelseacrockett.com team, and let me tell you, it was delicious! When I found this recipe for s’mores “sushi” I could not resist sharing it with you guys!

  • 10 oz mini marshmallows
  • ¼ cup butter, plus more for greasing the pan
  • 5 cup Rice Krispies cereal
  • ¾ cup graham cracker crumbs
  • 7 oz jar marshmallow creme
  • 6 bars of Hershey’s chocolate

 

Preheat the oven to 200 degrees. Line a 10×15 jellyroll pan with waxed paper. Butter the waxed paper and set aside. Combine the marshmallows and one fourth cup of butter in a microwave-safe bowl. Cover and heat on high for 30 seconds, stir. Repeat until completely blended. Stir in Rice Krispies cereal and graham cracker crumbs. Press mixture into the buttered pan. Spread marshmallow creme on top using a rubber scraper. Lay the Hershey’s bars on top of the marshmallow creme. Place in oven for two minutes. Use a spatula to spread the softened chocolate. Let it cool for 10 minutes, and then roll it up like a roll of sushi (or like a cinnamon roll), starting at the long side and peeling the wax paper as you go. Pinch the seams together and place it seam side down, refrigerating for about 30 minutes. Slice it like suchi, and serve!
