Breakfast is the most important meal of the day.  It’s the meal that gives you the energy to start your day!  I always think of quick and easy meals I can create to give my body the boost it needs.  Well, toast is a fast way to start your day and it can be extremely healthy and nutritious if you know what to add to it.

Chelsea Crockett - Toast RecipesThe first recipe involves a piece of wheat toast with peanut butter and bananas!  Smear on a healthy serving of smooth or crunchy peanut butter, whatever you prefer. Take a banana and slice it up then put the banana slices all over the top of the peanut butter. Feel free to sprinkle a little cinnamon across the top of your toast, too!

Another recipe that I love is avocado toast. I take half an avocado and smash it up then add salt, pepper, and some red pepper flakes to it. Stir it all up and smear the avocado spread all over the top of your toast. It’s delicious! Feel free to add some bacon slices if you have some :).

My other favorite go-to recipe is scrambled egg with cheese and bacon on toast.  I love to take a fresh egg and scramble it in olive oil. Then, I add some cheddar cheese to the mix and stir it up. I toast my wheat bread and put the scrambled egg on top of it after it’s done! While I’m cooking all of that, I fry my bacon in the microwave. It comes out very crisp and I add it to my scrambled egg sandwich! YUM!

Fast French Toast in a Mug

Making meals in a mug is one of my new specialties. Recipes like these are coming in handy this summer when I am busy interning at my church and YouTubing. They are quick, easy, and perfect for just one person. Today’s mug recipe is a deliciously easy take on French toast! It is super quick and super delish.

Ingredients:

  • 1 piece of buttered bread
  • ¼ cup milk
  • 1 egg
  • 2 TBSP of syrup
  • 1 tsp ground cinnamon
  • Pinch of salt
  • 1 TBSP of chocolate chips
  • Powdered sugar and cinnamon sugar (totally optional, but definitely recommended!)

In a microwaveable mug, mix the egg, milk, syrup, cinnamon and salt until well combined. Cut the bread into squares that are bite sixed. Add the bread to the mug and press the pieced down so they are covered with the liquid. Add the chocolate chips to the mug and stir them into the bread mixture. Sprinkle the cinnamon sugar on top and then microwave the mug for 2 minutes, stopping every 30 seconds so it doesn’t spill over the mug. Let the mug cool about 1-2 minutes, then sprinkle powdered sugar on top.

Enjoy your yummy mug French toast!

If you follow me on Instagram, then you know I have started living a healthier life by exercising and eating better. I love to start my day with a healthy breakfast smoothie to fuel my body the right way. I have had a ton of people comment on my Instagram photos and ask me to go into detail on what I am eating and what I am doing to exercise, so I thought I would share my favorite breakfast smoothie recipe!

Ingredients:smoothie

  • 1 cup strawberries (frozen or fresh)
  • 1 banana
  • ½ cup oats
  • 1 tsp. Raw honey
  • ½ cup peanut or almond butter
  • 1 cup almond milk
  • A handful of ice cubes

Blend all of these ingredients together, and you will have a delicious pink breakfast smoothie! If I am running late, I can always take this breakfast-to-go and still have the healthy fuel I need to get through the day. This smoothie I packed with protein and super tastey!

For me, getting out of bed is a chore.  I can hit my snooze button again and again before I force myself to actually start my day.  If you’re a morning person, you might find it easy to hop out of bed, but for those who aren’t morning people, you could use a few tips on how to make getting out of bed an easy part of your day!

  1. Turn the temperature up in your room.Chelsea Crockett - Staying in Bed  I know for me, it’s so much harder to get out from under my warm blankets when my room is freezing cold.  Turn up the thermostat to make it easier on your body.
  2. Prepare a good breakfast to look forward to.  I’m much more willing to get out of bed when I know I have a delicious meal ahead.  I love food, so this acts as a little reward or motivator!
  3. Switch up your morning routine.  It’s hard getting out of bed when you know you have the same boring routine to go through.  Switch it up a little!  Maybe change breakfast meals or workout in the morning instead of after school.
  4. Go to sleep earlier.  This may seem like common sense, but getting a good amount of sleep will make you feel more alive in the morning!
  5. Open up your blinds or curtains.  This might seem like the last thing you want to do, but if your room is pitch-black, you’ll never want to get out of bed!

I have a feeling that in college, it is going to be tough for me to squeeze breakfast in. I am someone who loves to sleep in, and eating breakfast doesn’t always go hand in hand with sleeping until the last possible minute. So, I have been looking for yummy breakfast foods that I can grab and take with me on my way to class. Here is a recipe for super easy, delicious, healthy strawberry shortcake overnight oats!

Ingredients:Strawberry-Shortcake-Overnight-Oats

  • 12 strawberries, either fresh or frozen
  • 2 cups rolled oats
  • 5 cups milk
  • 5 cups greek or plain yogurt
  • 1 tbsp strawberry jam
  • ¼ tsp vanilla

 

Chop the strawberries up and place them in a bowl. Mix in your other ingredients, stir, and place them in the fridge overnight. When you wake up in the morning, toss the oats in a disposable cup or bowl and head out the door!  How easy was that?! This nutritious breakfast will keep you full and focused all through your morning classes.

As the school year approaches, most of us are dreading getting back into the routine of waking up early, homework, and much more.  There are certain tips and hacks that…

As the school year approaches, most of us are dreading getting back into the routine of waking up early, homework, and much more.  There are certain tips and hacks that will help you get back into the swing of things but will also help you throughout the entire school year.  I know it can get hard!  That being said, here are some hacks from yours truly!

For the first week:

  • Plan exciting breakfasts for you to look forward to.  Chelsea Crockett - School OutfitI know if I have my favorite breakfast in my kitchen with some good coffee to chow down the next morning, I’ll be much happier to get out of bed!  It doesn’t make waking up such a dread!
  • Plan your outfits the night before.  It will save you the time and stress of picking it out while you’re rushing to get ready!  Hang it up so it stays unwrinkled throughout the night.
  • If you’re not 100% confident on knowing your new class schedule, make it your phone’s lock screen.  That way it’s accessible for a quick look.

For the whole year:

  • Studying can get old really fast, especially toward the end of the semester.  Try the tip of studying for 25 minutes then a 5-minute break.  And every third break take an extra 15 minutes!  This will give your brain a little rest so you don’t burn out!
  • When writing an important essay, it’s easy to miss the little typos and grammar issues.  Copy and paste your essay into Google translate and it can read it to you out loud!  It’s much easier to hear your mistakes when listening to it.

As summer (and college) approach, I am actively seeking easy breakfast ideas that take a very short time to prep and are way delicious. This recipe I am showing you today knocks those two attributes out of the park! Here is a yummy, easy recipe for peanut butter overnight oats that is packed with protein and totally satisfying.

Ingredients:

  • ½ cup unsweetened plain almond milk
  • ¾ tbsp. chia seedsOvernight-Oats
  • 2 tbsp peanut butter or almond butter
  • 1 tbsp maple sugar or your preferred sweetener
  • ½ cup rolled oats

In a small bowl or a mason jar, add the almond milk, peanut or almond butter, chia seeds, and sweetener. Stir to combine, then add the oats and stir a bit more. Cover the jar or bowl with plastic wrap or a lid and then store in the fridge for 6 hours or more (preferably overnight). The next day, open up the lid to your delicious oats and add toppings like sliced banana or strawberries to top it off.

Have you had churros before? If not, your taste buds have never experienced pure joy. Churros are golden twisted rods of deliciousness that are rolled in cinnamon and sugar right after being fried. If you HAD had churros, you will vouch for me when I say they are a treat indeed. If you want to bring dessert to the breakfast table, try this take on churros for breakfast!

Ingredients:

  • Waffle mixCinnamon-Roll-Waffles-060-1-625x814
  • A dash of cinnamon (to put in the waffle mix)
  • 1 cup white sugar (for topping)
  • ¼ cup cinnamon (to use in topping)
  • ½ cup melted butter (for topping)

                                                                                                    

In a large bowl, mix up your waffle mix to the specifications on the box, then add in a few dashes of cinnamon. Set that aside, then grab a saucer and mix the sugar and ¼ cup of cinnamon together on it. This is your topping for the waffles! Heat up your waffle iron and spray it with non-stick spray. Cook the waffles until they are golden and crisp, and immediately pour the melted butter on each side of them and dip each side in the cinnamon/sugar mixture on the saucer.

This recipe id a deliciously sweet take on breakfast!

As you well know, breakfast is the most important meal of the day, and undoubtably the most skipped meal of the day. But, nonetheless, an important meal. Breakfast food is some of the best food, too. Pancakes, waffles, eggs, bacon….mmmm…You know what would make breakfast even better? Protein. Protein keeps you full and focused, which gets you off to a good healthy start. Here is a recipe for protein pancakes that is super easy and is bound to start your day off in the sweetest way possible!

Ingredients:

  • 2 eggs
  • 1/3 cup dry oatsprotein-pancakes-banana-oat
  • 1 scoop vanilla protein powder
  • 2 tablespoons unsweetened almond milk
  • ½ tsp vanilla extract

Whisk the liquid ingredients together, and then add in the oats and protein powder. Cook the pancakes on a heated skillet, about ¼ cup of pancake mixture for each pancake. This recipe should make about 4 pancakes.

Since most of your days will be spent at home watching Netflix or hanging out with friends, there are certain things you should do every day that will make your summer stress-free and enjoyable!Chelsea Crockett - Breakfast

  • I don’t know about you, but I’m not the best at keeping my room clean! I’ve learned it’s much easier to do a 10 minute clean up each day rather than let clothes pile up over days at a time. During the summer, this will be much easier to maintain!
  • I’ve always been told “breakfast is the most important meal of the day.” I never realized how true this was until I made it a point to have breakfast every morning! Having something as simple as a smoothie will not only energize you but make you more motivated to start your day!
  • Wash your face, drink a cup of green tea, and take a refreshing shower. Make this a routine! Your body will thank you.
  • Take time to spend with God. Read a devotion if you have one, and if not, read a certain section of the Bible every day.

All of these things will be easier to accomplish without homework and school in the way… and I encourage you to do so!

Pizza. For breakfast. Did those three words blow your breakfast mind? If you are in the mood for something savory and saucy for breakfast, whip up a pizza scone! This recipe is from food blogger “Public Lives, Secret Recipes.”

Ingredients:

  • 2 1/2 cups all-purpose flour
  • Dash of salt
  • 3 tsp. baking powder
  • 1/4 cup sugar14017fa0-e46a-0133-7ff3-0e31b36aeb7f
  • 2/3 cup almond milk
  • 8 tbsp. cold salted butter
  • 1 tsp. oregano
  • 1 cup tomato sauce
  • 1 bag shredded mozzerella cheese
  • 1 bag pepperoni

Preheat your oven to 425 degrees. While it is warming up, grab a large mixing bowl and combine flour, salt, baking powder, milk, sugar, butter, and oregano. Stir all of this with a mixer until it is crumbly. Work the dough together using your hands until it makes a ball. Roll out the dough and cut it into triangles that measure about 4 inches on each side. Place ½ of the triangles onto a cookie sheet about 4 inches apart. Pour sauce, pepperoni, and cheese on top of each triangle. Then place the second triangle on top of the cheesed one and press the dough together to combine at the sides. Chocolate for breakfast. How heavenly does that sound? If it is done right, it can actually be a great healthy start to your day! One way is to make this deliciously creamy hot cocoa breakfast smoothie. It combines fiber, plant based protein, and wholesome ingredients to give you a sweet start to your day, Here is how to have chocolate for breakfast.

Ingredients:

  • 1 ¼ cup unsweetened vanilla almond milk
  • 1 tablespoon almond butterHot-chocolate-Smoothie-tall
  • 1 tablespoon maple syrup
  • ½ cup rolled oats
  • 1 tablespoons unsweetened cocoa powder
  • ½ teaspoon extract

The night before, add all ingredients to your blender and then stick your blender in the fridge overnight. In the morning, blend your ingredients on high until the oats are shredded and you have a smooth, creamy consistency. If you want to drink it cold, go for it! If you want it to be like hot chocolate, pour your smoothie into a small saucepan and cook it over medium heat. Add some chocolate chips if you want, and allow it to warm up. Once it is at the heat you desire, pour it into a heat safe glass and enjoy!

Greek yogurt is being used in everything these days, from ice cream to face masks to pancakes. Now I am taking it a step further and showing you a delicious recipe for Greek yogurt banana muffins! There is nothing better than a warm muffin and a cup of cold milk in the morning. These muffins are made without flour or oil, and the oats in them give them their shape. They have a dash of chocolate in them to suppress your sweet tooth, and they are super duper moist! I cannot wait to whip up a batch myself.

 

Ingredients:

  • 1 cup plain Greek yogurt
  • 2 ripe bananas
  • 2 eggsBanana-Oat-Greek-Yogurt-Muffins4
  • 2 cups rolled oats
  • ¼ cup brown sugar
  • 1½ tsp. baking powder
  • ½ tsp. baking soda
  • ½ cup chocolate chips

Preheat your oven to 400F and spray a muffin tin with nonstick spray or coat it with coconut oil. In a blender, add all of your ingredients but the chocolate chips and blend them on high until the batter is smooth. Stir in the chocolate by hand and then pour the batter into the muffin pan, filling each hole until it is about 75% full. Sprinkle your chocolate chips over the muffins and then bake for 15-20 minutes. Allow them to cool for about 10 minutes before you remove them from the pan.

 

These muffins are crazy good and good for you! They are healthy enough for breakfast and tasty enough to get your day started off right.

The title of this post makes my mouth water like Niagara Falls. No joke. Who wouldn’t want to start their day off with pancakes stuffed with delicious, chocolatey Nutella! Here is how to make that dream a reality.

Ingredients:

  • 10 – 14 tbsp Nutella
  • Pancake mixNutella-Stuffed-Pancakes-364x245
  • 1 tsp butter, separated (2 x ½ tsp)
  • Sliced strawberries (optional)

The first step is to freeze discs of Nutella. Line a cookie sheet with parchment paper and then spoon out 7 dollups of Nutella. Spread the Nutella into 2.5 inch discs and then place them in the freezer for about an hour. Meanwhile, make the pancake mix and butter up a skillet. Pour ¼ cup of pancake mix into the skillet and then quickly place a Nutella disc on top of the batter. Cover up the disc with more batter and wait 2 minutes, then flip the pancake over. Make sure the pancake is cooked, remove it from the skillet, and then make the rest of the pancakes the same way. I top my pancakes with strawberries for some added yumminess and nutrition!

This would make breakfast DEFINITELY the best meal of the day. 😉

Chocolate? For BREAKFAST? Who ever heard of such a thing! There is a way to enjoy the rich taste of chocolate first thing in the morning…and don’t let the tofu in it scare you away! You cannot even taste the tofu, yet it packs the smoothie with protein and will keep you full during the day. You can even mix in some coffee for a little extra pick-me-up!

  • 1/3 of a 10 oz. block of firm tofu
  • 1 small sliced banana
  • 5 tbsp. unsweetened cocoa powder
  • 1/4 cup of milk, any kind
  • 1/2 tsp. vanilla
  • 5 tbsp. brown sugar
  • 1/2 cup of ice

 

In a blender, add all of the ingredients together. This is a quick, easy way to get some tasty protein in the morning! I cannot wait to try this tasty smoothie, tofu and all!
