St. Patrick’s Day is only a couple weeks away, and I don’t know about you but I think it’s such a fun holiday to celebrate!  This year, I’ve looked up different festive recipes and so many of them make the use of Lucky Charms.  They’re so creative and yummy!  Here are a few Lucky Charms snacks and treats that make celebrating St. Patty’s Day ten times better.

  • Lucky Charms Dirt Cake.  Chelsea Crockett - Lucky Charms CupcakeIf you’ve had dirt cake, then you know just how good it is.  All you need to make is vanilla pudding and add food coloring to make it green.  Then, in a large glass bowl, fill in a layer of pudding, whip cream, then lucky charms… and repeat! It looks and tastes great!
  • Lucky Charms Cupcakes.  This recipe is extremely simple!  Just make a fresh batch of cupcakes, ice them, and finish them off with some Lucky Charms like the picture on the right!  You can make different designs out of all the different marshmallows!
  • Green Lucky Charms Pancakes.  When I was little, my mom would always make me a full green breakfast for St. Patrick’s Day.  If you want green pancakes, put food coloring in the batter.  Add some whip cream to the top followed by a sprinkle of Lucky Charms!  They’re perfect for the occasion! 🙂

Hot Chocolate Cupcakes with Marshmallow Frosting

What if I told you that I could put everything you love about hot chocolate into a cupcake? Even the delicious marshmallows? Well, I can, and I am going to share with you just how to do it! These cupcakes will make you want to curl up next to the fire with a blanket and a book, just like a cup of hot chocolate makes you feel. The homemade marshmallow frosting on these is to die for, and it only takes minutes to make! Here is how.

Cupcake ingredients:

  • 3/4 cup unsalted butter
  • 3 cups unbleached all-purpose flour
  • ¾ cup canola oil
  • 4-1/2 oz. chopped bittersweet chocolate
  • 3 cups granulated sugarhot chocolate
  • 3/4 cup natural unsweetened cocoa powder
  • 3 large eggs at room temp
  • ¾ cup room temp buttermilk
  • 2 Tbs. vanilla extract
  • 2-1/2 tsp. baking soda
  • ½ tsp. salt

Ingredients for the frosting

  • 1½ cups sugar
  • 2 tablespoons light corn syrup
  • 6 large egg whites
  • 1 teaspoon pure vanilla extract

Directions for the cupcakes

Heat your oven to 350°F. Place cupcake liners into your cupcake pans. In a large saucepan, add the butter, oil, 1 cup of water, and chopped chocolate. Heat over medium heat until combined, melted and fully. In a large bowl, whisk the flour, cocoa powder, and sugar. Pour the hot chocolate mixture into the sugar mixture and whisk until combined. Whisk in the eggs one at a time, and keep mixing so they do not scramble. Next whisk in the buttermilk, vanilla, salt, and baking soda. Fill each cupcake liner about two-thirds full. Bake the cupcakes for 17-22 minutes, or until a toothpick comes out clean when stuck into the center. Cool on racks for about 10 minutes.

 

Directions For the frosting

In the bowl of an electric mixer set over a saucepan of simmering water, combine sugar, corn syrup, ¼ cup water, and egg whites. Cook over medium heat, stirring frequently for about 2 minutes. Whisk the mixture on high speed using the electric mixer until it is glossy and voluminous, or about 5 minutes. Beat in the vanilla, and then top your cupcakes with the frosting.

While it may seem easy, baking can be hard sometimes! I even mess up the box directions! By observing my mom and my own mistakes, I figured out the way around some of the most common…and not some common, baking mistakes. Let’s make the best cake ever!Chelsea Crockett- baking mistakes

  • I love love love fruit! If you’re making a cake or cupcakes with fresh fruit, roll the fruit through flour to keep each piece from sinking to the bottom.
  • Melting chocolate chips can be hard! Microwave chocolate pieces with vegetable or canola oil for short amounts of time, stirring in between. Chocolate can burn very easily! (I’ve done this too many times.)
  • Only fill cupcake cases 2/3 high to leave room for rising! They’ll turn out to be the perfect size!
  • Don’t put too many things in your oven! This causes the baking time to be longer, which may result in over-baked or burnt goods!
  • Test cakes right out of the oven by dipping a toothpick in the cake. If the toothpick is clean, then your cake is perfectly cooked!
  • To avoid your desserts from looking sloppy, make sure they are fully cooled before decorating or icing. I know it’s hard to be patient when it smells so good!!

Cinnamon Toast Crunch cereal is my weakness. I could eat that stuff by the handful! Here is a recipe for cupcakes that incorporate those toasty treats. Here is how to whip up a batch!

For the batter:IMG_1203-1-682x1024

  • 1 French Vanilla cake mix
  • 1/2 cup melted butter
  • 3 tsp vanilla
  • 3 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1 tbsp cinnamon
  • Brown sugar to top cupcakes

Pour your batter into cupcake liners and bake it for 13-15 minutes at 350ºF. Once a tooth pick comes out clean, take the cupcakes out and let them cool before you put your icing on them, and while they are cooling make the icing.

 

For the icing:

  • 1 1/2 cups butter at room temperature
  • 1 3/4 cup cinnamon toast crunch cereal crumbs
  • 5 tsp vanilla
  • 1 tsp butter flavoring
  • 4-5 cups powdered sugar
  • 2 tbsp condensed milk
  • 4 tbsp brown sugar
  • 1 1/2 tsp cinnamon

Whip all the ingredients together until you get a desired consistency, then ice your cupcakes! After icing them, sprinkle with cinnamon sugar and top with a Cinnamon Toast Crunch square. Then, munch away!

Valentine’s Day Cupcakes

            Ahhhh Valentine’s Day, the most romantic day of the year, is right around the corner.  It’s a wonderful time to spend with the person you love or with your best girlfriends!  Even if you don’t have a special someone, you can still make Valentine’s Day an exciting holiday.  One of my favorite treats is cupcakes.  They’re an easy gift to give someone, to share at your “No Boys Allowed” party, or to keep all to yourself.  Check out how to make the cutest and sweetest Valentine’s Day cupcakes around!

            Start by buying your favorite flavor of cupcake mix from the store and all of the necessary ingredients (usually listed on the back of the box).  I prefer red velvet since it is Valentine’s Day!  Also, don’t forget to grab white icing as well as some red food coloring.  Now you’re reading to start cooking!  Once the cupcakes are done baking, place them in the refrigerator, so they can cool faster, and start making the icing.  If you made red velvet cupcakes, then add just a few drops of red food coloring to the jar so the icing turns pink!  If you used any other flavor of cake mix, then add extra drops to make the icing red and mix it up.Chelsea Crockett- Valentine's Day Heart Cupcakes

            Next, cut the top off of each cupcake so it is flat on the top.  Make sure you save the top of each cupcake!  Using a heart shaped cookie cutter and the top of each cupcake, cut out a heart in the middle of each piece.  Now, ice each cupcake and lay the top, with the heart, back on top of each cupcake. This way, the heart will be pink or red!  Finish off your cupcake by sprinkling a little powdered sugar on the top and you’re good to go!  I hope you enjoy these cupcakes as much as I did!

            Halloween’s right around the corner, which means bonfires, hayrides, parties, and other festivities are, too!  If you’re hosting (or helping host) a Halloween-themed party, you’re going to need fun and festive treats for your guests to snack on.  Below are a few creative and decorative ideas for yummy foods and snacks!

            Chelsea Crockett - Apple PlatterAll candy and sweets aside, fun appetizers are a perfect way to kick off your party.  One of my favorite ideas is a dipping platter for apples.  Get an oval shaped platter and spread an eight ounce tub of cream cheese in the middle of the platter.  Then lay apple slices all around the outer ring of the cream cheese!  Drizzle some caramel sauce on top and bon appetite!

            The most important part of Chelsea Crockett - Ghost PretzelsHalloween, is the sweets!  Anything dipped in chocolate is perfect for me, so this treat is a cute idea and so yummy!  Take a bunch of pretzels sticks and dip about one third of each them into white chocolate.  Then, take black icing and draw little faces on them for the resemblance of ghosts!  Some stores even sell little icing pens to make it a lot easier for decorating.

             Another dessert idea is to make spider cupcakes.  Ice your cupcakes with chocolate icing and use strips of black licorice for legs.  Small marshmallows with a dot of black icing in the middle will work for eyes.  It’s a silly way to celebrate the season.  Enjoy this time of year with family, friends, and the tasty treats that come with it!
