The pumpkin patches where I live are open, which has me craving everything pumpkin. Pumpkin pie, pumpkin coffee, and even pumpkin ice cream! This next recipe is the best of both worlds – it is a healthy snack AND a pumpkin flavored treat. You can even drink it for breakfast. Pumpkin pie first thing in the morning? Count me in!

Ingredients:

  • 1 frozen banana
  • 1 cup pumpkin puree
  • ½ cup Greek yogurt
  • ½ cup milk (regular or almond)
  • 1 teaspoon pumpkin spice
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • Graham cracker for toppings

Place all of the ingredients except the graham crackers into your blender. Blend until smooth and then pour into a glass and top with graham cracker crumbs.

YUM! It’s like fall in a cup.

This week the temperature is going to be in the 100’s almost every day where I live! This heat has me trying to think about refreshing treats that I can quickly whip up and enjoy. This recipe is easy, simple, healthy and delicious. Here is how to make frozen yogurt blueberry bites.

Ingredients:

        1 cup blueberries

        ½ cup vanilla yogurt

        Toothpicks

Place a blueberry on a toothpick and dip it in yogurt. Place berries on a parchment paper lined cookie sheet. Place the cookie sheet in your freezer for about an hour. Then, enjoy! You can also store these in an airtight container in your freezer. I love eating these as a snack while watching a movie, or enjoying them outside while I read on my porch.

During the summer, I am a fruit snacker. I love having fresh fruit around! If you want to work fresh fruits into your daily summer diet, try making this delicious, nourishing, homemade vitamin water! Unlike store-bought vitamin water, it has no added sugar or artificial sweeteners.

Ingredients:

  • 2 cups cubed watermelon
  • 1 sliced lime
  • 1 sliced lemon
  • ½ sliced and quartered red grape fruit
  • 1 sliced medium cucumber
  • 12 mint leaves
  • 2 quarts water
  • ice

Combine the fruit, cucumber, mint and water in a large pitcher. Stick the pitcher in the fridge and let it infuse overnight. The next day, pour yourself a large glass over ice and enjoy! This simple and easy vitamin water is great to make just for you, or for a summertime party! It has a tons of nutrients and vitamins in it, so you can feel great while you treat yourself to this tasty drink.

During the warm spring and summer months, I can’t get enough of fresh fruit. I eat it like candy! Here is a fresh, delicious, and healthy summer recipe to whip up for summer barbecues or pool hangouts!

Ingredients

  • 4 cups cubed watermelon
  • 2 cups chopped strawberries
  • 1 cup crumbled feta cheese
  • 1 tbsp chopped fresh basil
  • 1 tbsp olive oil
  • 1 tbsp lemon juice

Make the dressing by mixing the oil and lemon juice well.  Place watermelon, strawberries and basil in a large mixing bowl and sprinkle the dressing on top. Stir it up well, and then add feta cheese. Mix a bit, then enjoy! This refreshing summer salad is mouthwatering!

The words “healthy” and “cake” don’t usually go together in the same sentence. Well, today they do! If you are looking for a yummy, quick and healthy way to curb your sweet tooth, then look no further. Here is a recipe for a delicious, moist, cinnamon roll inspired mug cake that takes one minute to make. It is also gluten free for all of my gluten free gals out there!healthy-low-carb-cinnamon-doughnut-mug-cake-5

Ingredients:

  • 1 scoop vanilla protein powder
  • ½ teaspoon baking powder
  • 1 tablespoon coconut flour
  • ½ teaspoon cinnamon
  • 1 tablespoon granulated sugar
  • 1 large egg
  • ¼ cup of milk
  • 1 teaspoon granulated sugar
  • ½ teaspoon cinnamon

Grease a large mug of your choice with cooking spray and add the protein powder, baking powder, coconut flour, cinnamon, and sugar and mix well. Add the eggs and mix them in, then do the same with the milk and vanilla. Mix the teaspoon of sugar and some extra cinnamon and swirl them over the top of the batter. Microwave the mug for a minute and voila, delicious mug cake!

I’m a late night snacker. Ill admit it! I am 100% sure this will carry into my college career as well. Sometimes the late night muchies just hit you out of no-where! Researchers link late night snacking calories to be the potential for weight gain, and studies have also shown that eating right before bed can make your sleep more restless. But also, no one likes to go to bed on an growling stomach! This is where low cal, sleep friendly snacks come in. Here are a few for the next time you have to answer the call of the late night munchies.

  1. Baby carrots: At just 4 calories per carrot, what is not to love about these sweet, crunchy veggies?
  2. Banana: I go bananas for bananas. Bananas are packed with fiber and tryptophan, which is a chemical that makes us sleepy!images (3)
  3. Apples and peanut butter: I love this sweet snack. Apples are full of fiber and also offer a nice little crunch. When you dip them in peanut butter or almond butter, you are also filling up your tummy without making you feel heavy!
  4. String Cheese: One serving of string cheese is only 80 calories and contains good proteins and fats to help fill you up and satisfy you.
  5. Cereal: You can eat it either dry or with milk! But, when I say cereal, I do not mean Lucky Charms or cinnamon toast crunch (unfortunately!). I mean cereals that are whole grain such as oatmeal or corn flakes.

So, when the late night munchies hit, you will now be prepared! Reach for one of these healthy little snacks to kick your hunger to the curb! These are also easy snacks to keep on hand in a dorm room if you have a fridge or mini fridge!

When I think about summer snacks, fruit always seems to come to mind. A juicy, sweet piece of fruit always seems to hit the spot in the sweltering heat. If you are a fruit lover, and a snacker, then you will love this totally snack-worthy fruit salsa recipe! Plus, you can make cinnamon tortilla chips to dip into your sweet salsa. Delish!

Ingredients:

  • 2 cups pineapple chunksstrawberrypineapplesalsa2_bakedbyrachel
  • 2 cups chopped strawberry
  • 8 tortillas, 8 inches wide
  • 6 tablespoons unsalted, melted butter
  • 6 tablespoons granulated sugar
  • 1 ½ teaspoon cinnamon

Preheat your oven to 350 degrees, and line two baking sheets with parchment paper. Combine the cinnamon and sugar in a bowl and set it aside. Cut your tortillas into chip-sized pieces. Cut them like you would a pizza. Brush the pieces with melted butter and then sprinkle the cinnamon sugar on them. Bake them for 10-15 minutes, then transfer them to a plate to cool. In a big bowl, toss the pineapple and strawberry chunks. If you want, you can add a dash of sugar to this to sweeten it up a bit. Now all that is left to do is gobble this fresh treat up with your cinnamon sugar chips!

So yummy and so fresh!

If you haven’t eaten a whole 1 pound bag of Sour Patch kids on a road trip and then not been able to feel your mouth for a solid 3 hours afterwards, you have never really lived. Just kidding, but all jokes aside, I could put away a pretty hefty amount of those sour dudes. If you are like me and love sour candy but don’t love all of the bad-for-you sugar in them, check out these “Sour Patch” grapes!

Ingredients:

  • 1/3 box Jolly Rancher Watermelon Jello mixSour-Patch-Grapes-432a299b0a46f29d9a1298e9727ec2b718001a44
  • 1/3 box Jolly Rancher Green Apple Jello mix
  • 1/3 box lemon Jello mix
  • 1/3 box orange Jello mix
  • 3 pounds green grapes
  • 1 cup of water

Pour 1/3 of each box of Jello into small separate bowls. Have your grapes sitting in a bowl of water. Take a grape out of the bowl and poke a toothpick through it in the spot where the stem was, and hold on to the grape using the toothpick while rolling the grape in the Jello mix. Set them on a baking sheet covered in wax paper. After alternating dipping flavors for each grape and all of the grapes are rolled, place them in the fridge until they are chilled. Done!

My friends love these. They are great movie night snacks when you really want to stuff your face with candy but you know prom and summer are coming up so you have to keep your hot bod maintained. Ya feel?

I crave French fries a lot. Like a LOOOTTT. Who doesn’t? They are salty crunchy goodness…mmm… What if I told you that you can get all of the delicious crunch and taste of a French fry, but in a healthier form? Introducing: green bean fries!

Ingredients:

  • 1 cup bread crumbs
  • Salt and pepper to tasteDSC_0939-1024x685
  • ½ cup grated parmesan cheese
  • 1-2 pounds washed and trimmed fresh green beans
  • ½ cup flour
  • 2 large beaten eggs

Instructions:

Preheat your oven to 425, then line a large baking sheet with aluminum foil. Spray the foil lightly with cooking spray. In a bowl combine the bread crumbs and parmesan cheese. Put the flour in a smaller bowl and place the beaten eggs in a separate bowl as well. Take a handful of green beans and dip them into the flour, then eggs, then bread crumb mixture. Make sure they are coated with crumbs really good! After they are covered, place them in a single layer onto the baking sheet. Put the pan in the oven and bake for around 10-12 minutes. Let them cool, then eat them up!

This makes a great appetizer or snack! If you are looking to impress your family with your mad cooking skills, make these for them!

Getting to the gym on a cold winters day is a tough feat. All I want to do is go home and snuggle with my doggies, not sweat on the elyptical! So, for the days when a workout is looking like an impossibility, drink a smoothie for a meal to help give your body the nutrients it needs while avoiding unnecessary calories! Here is a recipe for a delicious detoxifying green smoothie.

  • 1 cup almond milk
  • 1 cup spinach
  • 1 banana
  • 2 apples
  • 1 cup of ice

Blend all of these babies together real good, then drink up! I love drinking smoothies for dinner because I don’t feel so full and sluggish, and I feel refreshed!

After workouts, I usually have the serious munchies. Like, I could probably eat half a pizza and polish off a box of Girl Scout cookies. But that is totally normal after working out! You just worked off calories and energy, so now your body is craving more! Here is a healthy take on a yummy snack: protein rice crispy treats! They are a great easy snack to take with you and eat on your way home from the gym to keep you from grabbing the first morsel of food you see when you get home.

Ingredients:

  • 1/3 cup vanilla protein powderIMG_1731-1024x790
  • 2 tbsp water
  • 1 drop butterscotch flavor
  • 2 drops marshmallow root extract
  • 1 cup protein marshmallow fluff (recipe here)
  • 1-2 cups crispy brown rice cereal

Mix the protein powder and water until it is smooth. Add the butterscotch and marshmallow root flavors, then mix well. Fold in the marshmallow fluff, then fold in the cereal. Make sure they are mixed well, then press into a cookie sheet lined with parchment paper. Freeze them for about an hour to make them harden,  then cut into pieces and eat up! Store them in the freezer in a Ziploc bag for easy snacking.

These treats are so much better for you than regular rice crispy treats. Satisfy your sweet tooth and your protein intake, all at once!

What do you usually have for an after school snack? After a long day at school I tend to crave something sweet. Something like…cookies! There is a few problems with this. One is that cookies are time consuming to make, and I want a snack right when I get home, and the other is that they aren’t the best for you! Today I am introducing cookies that are not only good for you, but they only take 5 minutes to make! They are packed with protein and sugar free, so that means they are totally guilt free, too. This recipe makes a giant yummy cookie for one.

Ingredients:

  • ½ cup rolled oatshealthy-no-bake-giant-cookie-for-one2
  • 1 tbsp coconut flour
  • Dash of salt
  • Dash of cinnamon
  • 1 scoop vanilla protein powder
  • 2 tbsp peanut or almond butter
  • 1 tbsp honey
  • ¼ cup almond milk
  • Chocolate chips of choice

Line a plate with parchment paper and set it aside. In a mixing bowl, combine the oats, salt, coconut flour protein powder, and cinnamon and mix well. Stir the peanut or almond butter and honey in until the mixture is crumbly. Add the milk a tablespoon at a time until the batter is very thick. Use your hands to form a cookie shape and eat up!

If you are like me, then you are always on the go during the summer. Just because it is summer vacation doesn’t mean the work stops for me! Because I am always running around, I need nutritious, delicious, bite size snacks that are healthy and tasty AND convenient! If you love dark chocolate and trail mix, keep on readin!

  • 1/4 Cup Trail Mix
  • 3 Tbsp Organic Dark Chocolate Chips

In a bowl, melt the dark chocolate chips in the microwave, making sure they don’t overheat and burn. Microwave them for 20 seconds, then stir, and then microwave them more if they are not completely melted. On some wax paper, spoon out dollops of dark chocolate the size of a quarter. Drop some trail mix into the chocolate and then press it down lightly. Place it in the fridge to help them firm up faster!

These make the best pre/post workout energy bites, road trip munchies, or cute gifts! Dark chocolate has antioxidants that are good for your heart, so these bites not only keep your appetite at bay, but they also help your ticker!

To me, salt and vinegar potato chips are something I often crave. They are the perfect road trip munchy, and late night bite! They are so tangy and delicious, I could eat the whole bag! And there lies the problem. Potato chips are far from healthy, as you may be sad to hear. But, luckily, there is a healthier version that you can munch on to your hearts content! Here is a recipe for salt and vinegar kale chips!

Ingredients:

  • 1 bunch kale
  • 2 Tbsp. vinegar
  • 1 Tbsp. olive oilSea-Salt-and-Vinegar-Kale-Chips-5
  • 1/2 tsp. coarse sea salt

Preheat your oven to 350 degrees F. Wash then dry your kale leaves and, using a knife, separate the green kale leaves from their ribs and throw away the ribs. Tear the leaves to the size that you want your chips, but keep in mind that they shrink once baked! In a large bowl combine the kale, vinegar, oil, and half the salt. Toss and mix the kale for a few minutes until it has darkened and softened. On a baking sheet or two covered in parchment paper, spread the kale out in one layer. Sprinkle on the rest of the salt and bake for 7-10 minutes. The kale should be crunchy! Once it has cooled, you can start munching on your healthy, tangy morsels! You can also store these tasty bites in a container for up to a week.

Impress the socks off of your friends with this healthy take on everyone’s favorite late night crunchy snack!

I love to have some popcorn or candy to munch on, but my absolute favorite movie time candy is sour patch kids. Those sweetly sour little devils are my kryptonite. Ingredients:

  • Grapes
  • 1 box of melon fusion Jello

Remove the grapes from their stems and rinse them with water. Strain them in a colander. Pour the gelatin onto a plate and coat the grapes in gelatin by rolling them or by using a spoon to sift the powder onto them. Refrigerate them for 1 hour to allow the gelatin to set, and then enjoy your tangy treat!

Quinoa is one of my favorite foods! It is a miracle grain. It has so many great health benefits! I have recently started trying to live a vegan lifestyle, which means I avoid eating animal products, such as meat and dairy. I wanted to see how it would benefit my health! Although this recipe isn’t entirely vegan (because of the butter and egg), it came pretty darn close. I loooooove buffalo wings, so this is the closest thing I could get! If you want the great taste of buffalo wings without the meat and with a healthier twist, try these quinoa buffalo bites!

  • 2 tablespoons butter, melted
  • 2 tablespoon olive oil
  • 1/4 cup hot sauce
  • 1/2 teaspoon seasoned salt
  • 2 cups cooked quinoa
  • 1 cup cannellini beans, mashed
  • 1/2 cup panko bread crumbs
  • 1 large egg, lightly beaten
  • 1/2 teaspoon salt
  • 1 teaspoon peper
  • 3 tablespoons olive oil

First, make the buffalo sauce. Combine the melted butter, olive oil, hot sauce and salt in a medium size bowl. Whisk the ingredients together to combine and set aside. In another bowl combine the quinoa, mashed cannellini beans, bread crumbs, egg, salt, pepper and 4 tablespoons of the buffalo sauce. Mix the ingredients well to moisten them and then form them into 30-35 equal size balls. Squeeze the balls together tightly with your hands. Be gentle! Heat a large skillet over medium-high heat and add olive oil. Add half the balls to skillet and cook until golden and crisp on all sides. This should take about 5 minutes. Gently (I emphasize the word gently) dip each ball in the sauce.

Dip these suckers in Ranch dressing and boom, you have a delicious quinoa infused meal on your hands! Enjoy!
