Cupid’s Crunch Popcorn Mix

Valentine’s Day is right around the corner.  Whether you have a fun date night planned or a night in with the girls, there are so many fun treats and snacks to make and enjoy!  One of the easiest and most festive recipes that I stumbled upon is called Cupid’s Crunch popcorn mix.  If you want to make a yummy treat for you to enjoy this holiday, I recommend this one! 🙂

First comes first, you’ll need a few ingredients: 2 bags of microwave popcorn, 2 cups of pretzels, 1 ½ cups of M&M’s, a 12-oz. bag of pink Wilton candy melts, and other festive decorations such as sprinkles and heart shaped candies.  Chelsea Crockett - Cupid Crunch Popcorn MixNext comes the fun part!  Follow the instructions and pop the two bags of popcorn.  Pick out any unpopped kernels so you don’t bite into them later on!  Then, take the candy melts and place them in a microwaveable bowl (you may have to do this in shifts!).  Microwave them until all of your candies are melted.  Before pouring in your melted candies, crunch up the pretzels into pieces and pour them into a bowl with the popcorn and M&M’s.  Then, pour in half of your melted candies.  Using a rubber spatula, stir the mixture together and pour it onto a piece of wax paper.  Finish it off by pouring the rest of the melted candies on top!  Sprinkle on any extra heart candies or sprinkles that you have.  Let it sit until it dries then break it up into smaller pieces.  That’s all there is to it!

Midnight snacking is one of my weaknesses. I am usually up pretty late at night finishing up homework or editing videos, and my tendency is usually to go down to the kitchen and grab myself a yummy late night snack. The problem with this? The later at night you eat, your body is more and more likely to store those calories as fat. Eating healthy midnight snacks can help keep you from consuming unnecessary calories!

  1. Greek yogurt: Instead of reaching for the pint of ice cream in your freezer (although very tempting!), grab some sweet, cool Greek yogurt. Top it with frozen berries or honey to add some pizazz to it!greek-yogurt-1
  2. Air-popped popcorn: Instead of reaching for a bag of potato chips, although crunchy and very satisfying, opt for air popped popcorn. Add some salt and a smidge of butter to make it taste just like bagged microwave popcorn, but with much fewer calories.
  3. Almond butter and apples: Peanut butter contains healthy fats, but it is also packed with calories. Get the same nutty, rich flavor from almond butter, and dip slices of your favorite type of apple in it! Salty AND sweet.
  4. Chocolate: Yes, chocolate! But the RIGHT kind of chocolate. Two squares of dark chocolate are sure to satisfy your sweet tooth and have way less sugar and more antioxidants.

What is your favorite candy bar? One of my absolute favs is Snickers! The best way to watch a movie is with a bucket of popcorn, so at your next movie marathon with your gal pals, make them Snickers popcorn!

Ingredients

  • 8 quarts of popped cornSnickers-Caramel-Popcorn
  • 1 cup of salted butter
  • 2 cups of packed light brown sugar
  • 1 teaspoon salt
  • ½ cup of light corn syrup
  • 1 teaspoon baking soda
  • 1 cup of salted peanuts
  • 30 “fun size” Snickers bars, chopped
  • 3 ounces melted semi-sweet chocolate

Preheat your oven to 200 degrees. Over medium heat, boil the butter, brown sugar, salt and corn syrup for 5 minutes. Remove the mixture from heat and stir in the baking soda. Pour the mixture over the popcorn and stir it so that it covers all of the corn. Spread some wax paper onto the counter and then pour the covered corn onto the wax paper. Sprinkle the peanuts on top and then transfer it into a roasting pan and bake for 1 hour, stirring it every 15 minutes. When you remove it from the oven, stir in the chopped Snickers and put it back in the oven for about 3 minutes. Remove the popcorn from the pan and then spread it onto the wax paper to cool. Drizzle melted chocolate on top of it, and then store it in a container until you and your friends are ready to devour it!

No matter what age you are, you can’t deny your love for one of Disney’s best movies: Frozen. Once you watch this musical, you’ll be asking everyone if they want to build a snowman! I recently came across the cutest recipe on Pinterest, and I wanted to share it with you! Not only do they look good, but they’re delicious as well.

So here’s what you need:

  • ½ a cup of sugar, 3 tablespoons of canola oil, ½ a cup of popcorn kernelsChelsea Crockett - Frozen Popcorn Snowballs
  • 5 cups of mini marshmallows, 4 tablespoons of butter, ¼ a teaspoon of salt, ¼ a teaspoon of vanilla extract, 1 cup of dark blue, light blue, and white MNM’s, (you can also add some sprinkles for fun!)

Directions: To start off you’ll need to make your popcorn (I prefer it on the stove verses microwaving it). Put your kernels in a pot and coat them with the canola oil. Wait till it becomes hot and place the lid on top of the pot. Wait till all your kernels are popped (shake the pot back and forth occasionally) and place your popcorn in a large bowl. Next, take a saucepan over medium heat and mix in your marshmallows and butter. After the mixture is melted, take the pan off of heat and stir in the vanilla extract and salt. Okay, you’re almost ready to dig in! Pour the mixture over the popcorn and add in your toppings (MNM’s and sprinkles). Cover your hands in a little bit of oil (to avoid sticking) and roll the popcorn into balls, depending on whatever size you prefer! Let them cool for about a half hour then go to town! YUM!

This Christmas popcorn is such a super fun treat! It is festive, totally delicious, and super easy to make! Bring this bad boy to any Christmas party or Christmas break slumber party to knock the socks off all of your friends and family!

Ingredients:

  • 2 bags of popped popcornchristmas+crunch2
  • 12 ounce bag of vanilla candy melts
  • 1 1/3 cups broken pretzel pieces
  • 12 ounce bag green and red milk chocolate M&Ms
  • Christmas sprinkles

Pop your bags of popcorn and pour them into a large bowl. Toss in the broken pretzels and M&Ms. Melt the vanilla candy melts in a bowl in the microwave and drizzle half of the bowl of melted of vanilla candy over the popcorn mix and stir it all together. Then, drizzle the remaining melted vanilla candy over the popcorn and gently mix. Pour the mixture onto wax paper and sprinkle the mixture evenly with sprinkles before the vanilla candy hardens. After the mixture has hardened, break up the mixture into pieces and then serve it on a cute Christmas platter. You can even bag some up and tie it with cute bows and give it to friends and teachers for Christmas gifts!

Midnight Snacks That Are Actually OK?!

Everyone struggles with the midnight munchies. It’s so typical for me in be cuddled in bed and then feel my stomach rumble.  Sometimes I can’t tell if I’m actually hungry…

It’s so typical for me in be cuddled in bed and then feel my stomach rumble.  Sometimes I can’t tell if I’m actually hungry or just bored….either way, I usually find myself in the kitchen.  When you’re trying to eat healthy, that midnight snack can really get ya!  Lucky for you, I’ve come up with the perfect midnight snack substitutes for whatever you’re craving!

  • If you’re craving ice cream, try a yogurt instead. If that doesn’t satisfy your sweet tooth enough, try adding granola, berries, dried fruit, or a few candy pieces to the yogurt.
  • If you’re craving something salty, throw in a small bag of popcorn. The saltiness and crunchiness with kick that craving to the curb!
  • If you need some chocolate in your life, go for a small piece of 60% or higher dark chocolate. Each square contains a small about of sugar and is even full of antioxidants!
  • If you’re craving pie, try cutting up an apple and sprinkling some cinnamon and sugar on it. It’s like the pie without the crust! You can even warm it up!
  • If Mexican food is what you’re stomach wants, grab some tortilla chips and salsa or guacamole.
  • If you feel like you need a second meal, AKA you’re very hungry, I suggest making a small turkey sandwich on whole wheat bread. Turkey contains an amino acid that actually promotes sleep.

Next time you hear your stomach calling for help, don’t ignore it! Instead, try one of these healthier alternatives and crawl back into bed!

Summer is all about staying fit and eating right.  This is a hard thing to do when your pantry is filled with lots of salty snacks!  What you might not know is that there are many healthy alternatives to substitute for chips and other treats that taste just as good and benefit your body!

Chelsea Crockett - Sweet Potato Chips  Although chips are very delicious, they definitely aren’t the best thing for you.  Instead of potato chips, try sweet potato chips.  They are a high source of vitamin A and are much better for you than potato chips.  Along with their reduced fat, they are surprisingly very tasty! Another route to go would be rice cakes.  They contain less fat and less calories.

Most people find popcorn as a fattening and unhealthy snack.  But it’s not the popcorn that’s full of calories, it’s the toppings.  Toppings such as salt, butter, or cheese are full of fat and sodium.  As long as you stick with just the popcorn, or at least a small amount of toppings, it’s pretty much an all-around healthy snack.

Now anyone could have guessed these, fruits and vegetables.  Although they’re very different from chips, everyone needs their daily dose of nutrients and vitamins.  These are, of course, some of the healthiest foods you could eat.  Remember, an apple a day keeps the doctor away!

Who doesn’t love caramel corn? I love love love it! It is a sweet and salty snack that is sure to please the masses. The best part? You can make it into a cute holiday treat to make for Christmas parties! It is a definite crowd pleaser!

What you will need:

-1 cup of popcorn kernels, unpopped

-1 cup salted butter

-1/2 cup light corn syrup

-2 cups packed light brown sugar

-1 tsp sea salt

-1/2 tsp baking soda

-1 tsp vanilla extract

– Holiday M&M’s

 1. Pop your popcorn kernels and place it into a large bowl or two. Make sure that there is enough room in the bowls for you to easily stir the popcorn. Preheat your oven to 250 degrees.

2. While your oven is warming up, melt the butter in a saucepan over medium heat. Once the butter is melted, add the corn syrup, brown sugar, and salt to the pan to make the caramel sauce. Bring the mixture to a boil and stir frequently.

3. Once the mixture reaches a boil, let it boil without stirring it for 5 minutes. Remove it from heat, and stir in the baking soda and vanilla extract. The mixture should bubble up and become frothy. Pour the caramel sauce over the popcorn and stir it so that it coats the kernels evenly.

4. Spread the popcorn onto two baking sheets lined with parchment paper. Bake for 40-50 minutes, removing it from the oven every 10 minutes to stir the kernels. Once they have baked thoroughly, remove from heat and let them cool, then add M&M’s!

 

This is a sure hit with any Christmas party! Try it out, you won’t be disappointed!

Hey Insiders,

            Whether you’re a broke college student or middle/high school student with not enough time in the day, finding time to snack healthy is hard.  It’s so easy to grab a soda and a bag of potato chips and run out the door.  Although this snack may be tiny, over time it can start to mess with your health.  Scary, huh?!  Show your body some love by snacking on foods that will benefit your body and overall health.  I’ll list a few of my favorite cheap, healthy, and on-the-go snacks for your busy life!

  • Popcorn: Pop a small bag before you go to bed.  This way you can grab the bag as you run out the door in the morning.  It’ll satisfy those salty cravings without all the calories.
  • Yogurt:  Ever get that late night ice cream craving?  I do!  Instead, try eating a yogurt.  It comes in so many flavors like vanilla, key lime pie, and even chocolate cake!  It has the creaminess and sweetness of yogurt without all the added fat.
  • String Cheese:  It’s not just for kindergarteners anymore!  This is such a great snack to grab out of the fridge and go.  It’s full of calcium and will even give you a little extra protein.
  • Nuts: This protein packed snack comes in so many different varieties and is extremely portable.  Pair them with a handful of raisins for added sweetness!
  • Crackers: Pick whole grain over regular crackers to feel fuller longer. Chelsea Crockett- nuts

Remember, it’s always simple to grab an apple or banana on the go too!  Taking care of your body is so important!  Not only will you feel better, but you’ll have a rockin’ bod and clear skin as well.  It’s a win-win situation!  Go healthy!
