Acai bowls, or smoothie bowls, are the newest rave. Although they’re super healthy, they’re not only for the health nuts.  They’re a low-calorie, delicious snack that gives you lots of necessary vitamins and satisfies your fruit serving for the day! Chelsea Crockett - Acai Bowl Here’s how you can make your own right at home.

There are tons of different bowls you can make from Hawaiian, with lots of tropical fruits, or more of a sweet one with peanut butter and granola!  But for this recipe, I’ll just start with something simple and delicious!  You’ll first need a few ingredients: 1/2 a banana, 1 tbsp of cocoa powder, 1 1/2 tsp of peanut butter, 1/2 cup of frozen strawberries, half cup of almond milk, and 1 3.5oz pack of frozen acai berries or acai berry pulp.

As far as preparation goes, you’ll need to put all of these ingredients in a blender to make an acai puree.  Then add your toppings! I suggest adding sliced bananas, sliced strawberries, granola, and some peanut butter drizzle on top to finish it off.  Then, simply enjoy!

Are you going to try and create one for yourself?  Let me know how yummy yours turns out! 🙂

I am always looking for new healthy snacks. Sometimes, snacking on fruit isn’t super filling and I need something with a little more “oomf” to give me healthy energy. I found a super delicious recipe for “Healthy Strawberry Oat Squares” on the blog “Sally’s Baking Addiction” and I cannot wait to make my very own homemade granola bars! If you want to make them with me, here is how…

Ingredients:

  • 2 Tablespoons cornstarch
    71b12d72e08fac8925ced69eb767ec4e
  • 2 Tablespoons warm water
  • 2 cups finely diced strawberries
  • 1/4 cup maple syrup
  • 1 Tablespoon granulated sugar
  • 2 and 1/4 cup quick oats
  • 1 teaspoon ground cinnamon
  • 1 cup almond butter
  • 1/4 cup maple syrup
  • 1/4 cup apple butter
  • 1 large egg, beaten
  • 1/2 cup sliced almonds
  1. First you make the strawberry filling. Do this by mixing the cornstarch with the warm water until all of the cornstarch has dissolved and there are no clumps. Set the mixture aside. Then combine the strawberries, maple syrup, and sugar together in a small pan over medium heat. Bring the mix to a boil and stir well. Remove it from the heat and then stir in the cornstarch. Whisk until the clumps are gone and set it aside to cool and thicken.
  2. Preheat your oven to 325 degrees. Line an 8×8 baking sheet with aluminum foil and set it aside. Next we make the oat crust/topping. In a large bowl combine the quick oats, cinnamon, maple syrup, butter, apple butter, almond butter, and beaten egg. Mix this together until the oats are moistened and everything is well combined. Set ½ cup of the mixture aside. Press the rest of the mixture into the baking sheet. Firmly press it down and make sure it is even. Spread the strawberry filling on top of it and then crumple the remaining oat mixture on top, using a spatula to firmly press the topping into the filling.
  3. Bake for 25-30 minutes. The topping will be lightly browned. Allow to cool completely before cutting into squares.

This mixture makes about 9-12 squares, so you should be all set with snacks for a while!

Enjoy!

Who doesn’t love a banana split? I sure do, but I don’t love the calories that come with it. What if I told you that there was a way to get all of the great taste to a banana split, but with only a fraction of the calories? I introduce to you, banana split bites!

Ingredients:chelsea crockett

–       24 pieces of pineapple

–       2 bananas sliced into 24 slices

–       1 cup of dark chocolate chips

–       2 tsp coconut oil

–       12 strawberries sliced in half

Grab a cookie sheet and layer the pineapple slices on it. Then layer the bananas on top of the pineapple, then the strawberries. Stick a tooth pick through the layers of fruit and then stick them in the freezer for a few minutes. While they are in the freezer, melt your chocolate chips with your coconut oil on the stove. Dip your fruit into the chocolate and lay them on top of wax paper on a cookie sheet. Stick them in the freezer to cool the chocolate.

Now go enjoy your banana split bites!!

Spruce Up Your Water

Do you ever just get tired of the taste of water? Water is SO important to stay healthy, but sometimes the taste is just so boring that you just don’t drink enough. Now when it comes to a tall glass of Root Beer, I can down a glass of that in a jiffy! Here are some ways to mask the bland taste of water so you want to drink more!

The first way to mask the taste of water is to put lemon or lime in your water. Not only is this 0 calories, it is also super good for you! Drinking cold lemon water can help speed up your metabolism and also helps balance out your stomach acid! As for me, I like to put a squirt of lime juice in my ice water every once in a while, it is so refreshing and almost tropical!

The next way to spruce up your water, if you have a sweet tooth, is to add fresh fruit to it! Add strawberries, watermelon, whatever fruit you want, and let it sit in a pitcher of water in the fridge overnight.

Chelsea Crockett

In the morning, pour yourself a tall glass of sweet, fruity goodness! You can pour this refreshing concoction into a water bottle and take it with you wherever you go. It will help reduce your food cravings and keep you hydrated at the same time!

Hopefully these suggestions help you drink more H2O!

XOXO, Chels
