One of my favorite candy bars is Almond Joy. I love the yummy mix of coconut with milk chocolate and then that little hint of nut flavor…mmmmm! Did you know there is such a thing as Almond Joy oatmeal cookies?! Here is how to make these mouthwatering morsels. 

  • 1cup softened butter
  • 1 12cups white sugardsc07701__sharpshot_active_version1
  • 1 12cups brown sugar
  • 4 eggs
  • 3 teaspoons vanilla
  • 2 teaspoons baking soda
  • 1 teaspoon kosher salt 
  • 5 cups chocolate chips 
  • 2 cups sweetened coconut 
  • 2 cups chopped toasted almonds
Pre-heat your oven to 375°F  and lightly grease cookie sheets. Combine all of the dry ingredients and set them aside. In a large bowl, cream the butter and sugars together. Beat in the eggs one at a time and stir in the vanilla. Stir in the dry ingredients until they are well mixed then stir in the chocolate chips, coconut and almonds. Drop by rounded tablespoonfuls onto the cookie sheets. Bake the cookies for 8 to 10 minutes and let them cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Do any of you lovely Insiders ever crave something sweet and salty? Well do I have a snack for you! It is simple, easy, and even involves chocolate! These savory snacks can be made for any Thanksgiving or Christmas party you may be having, or you can just make them to eat for yourself!

Ingredients:

crackers

-Rolo Candy

– Ritz Crackers

Instructions:

Preheat your oven to 350 degrees. Place the crackers salty side down on a cookie sheet. Place one Rolo on each cracker. Bake the crackers for about 5 minutes to allow the Rolos to melt a bit. While the Rolos are still warm, place a cracker on top of them and push the two crackers together, forming a sandwich.

 

And viola, you are finished! These snacks are super quick and easy, and are sure to be a big hit at any party or get together, or even just as a late night snack!

Craving something sweet and salty? These pretzel bites will put a pep in your step! All you need is:

 -1 cup creamy peanut butter

-2 tablespoons softened butter
-1/2 cup powdered sugar
-3/4 cup brown sugar
-Pretzels
-1 bag semi-sweet chocolate chips

 1. Line a baking sheet with wax paper and set it aside.

2. In the bowl of a mixer, beat peanut butter and butter until it is all mixed together. Scrape the sides of the bowl, add the sugars, and beat until combined. You should be able to roll the mixture into balls without it sticking to your hands. If you need to, add more powdered sugar until you reach a consistency that is easy to roll.
chelsea crockett pretzels3. Roll the mixture into small balls, about 1 teaspoon of mixture for each ball, and place on the baking sheet. Sandwich the balls between two pretzels and place in the freezer for 30 minutes.

4. After they have frozen, melt your chocolate chips in a sauce pan and dip the pretzels into the melted chocolate. Place these in your refrigerator to cool. Store them in the refrigerator, also, because they taste better cold!

 

You can take these to parties, or just make them for yourself if you are craving something sweet!
