Today’s recipe is for a dessert that is so easy even a guy can make it! 😉 I know some pretty talented dudes who can bake, but this one is for the guys who have trouble just making boxed mac ‘n cheese. Plus, it is pretty delish! So, if you are not the best baker, have no fear, this recipe is just for you!man bars 3 pn

Ingredients:

  • 1 box graham crackers (14 ounce box)
  • 1 bag semi-sweet chocolate chips (12 ounce bag)
  • 1 cup finely chopped nuts
  • 2 cans of sweetened condensed milk (14 ounce cans)
  • 5 tsp vanilla extract
  • ½ tsp salt
  • 2-3 cups of powdered sugar

In a large bowl, combine the graham cracker crumbs, chocolate chips, condensed milk, vanilla, nuts, and salt. Mix it well until it is combined into a batter. Take a 9×13 baking pan and line it with parchment paper or greased aluminum foil. Spread the batter into the pans and bake it at 350 degrees for 30 minutes. After it is done baking, let it cool completely and cut it into squares. Pour the powdered sugar into a bowl and add the squares to the sugar. Gently toss them in the bowl to coat them with sugar, and then store them in an air-tight container.

See, what did I tell you! These are so easy to make, even a caveman could do it! 😉

Raise your hand if you love Milkey Way bars. Okay, I am just going to imagine a lot of your hands are raised! I loooove Milkey Way candy bars. They are the perfect balance of chocolate, caramel, and fluff! Here is how to make the most marvelous Milkey Way brownies you will ever have!

Ingredients:

  • 1 package of brownie mixScreen Shot 2013-07-15 at 8.36.44 AM2
  • For the chocolate fluff layer:
    • 1 cup semi sweet chocolate chips
    • 1 cup marshmallow crème
    • 1 ½ tbsp. heavy cream
  • Caramel layer:
    • 8 ounces of caramels
    • 1 ½ tbsp. cream

Preheat your oven to 350°. Line an 8 x 8 pan with foil and then make the brownie mix as the box instructs. Bake 25-30 minutes or until brownies begin to pull away from sides of pan. Let them cool completely while making the fluff. Melt the chocolate chips in the microwave with the cream. Once it is smooth, stir in the marshmallow crème until it is well combined and then spread it over the cooled brownies. Next make the caramel layer by melting the caramels with the cream in the microwave and then spread it over the fluff layer. Make the chocolate topping by melting chocolate chips with oil in the microwave until it is smooth and then spread it over the caramel layer.  Chill the brownies for about 2 hours, and then use a knife that has been heated with hot water to cut the frozen brownies.

Okay so how delicious do these sound?! I am making them asap.

The warm gooey chocolate, the cool creamy milk, mmmmmm I am getting hungry just thinking about it! Here is a genius way to get your cookies and milk fix..Make cookie cups!

Ingredients:
1 cup shortening

2 teaspoons vanilla extract
2 cups all-purpose flour, sifted
1/2 teaspoon salt

Add the egg yolk and vanilla extract, and mix until completely incorporated. Slowly add the flour and salt, and mix until completely incorporated. Add the mini chocolate chips, and mix together until evenly distributed. The dough will be a little crumbly!

Milk and Oreos. What a match made in heaven. Even better? Cookies and cream ice cream. Even BETTER? Cookies and cream popsicles! If you are like me and you live in a place where summers are totally squelching, you are in constant need of a cool-down treat. I have just the thing to cool your jets!photo-2 copy

Ingredients:

–       4 oz fat free cream cheese, softened

–       4 oz fat free plain Greek Yogurt

–       ¼ cup fat free milk

–       2 tbsp powdered sugar

–       6 Oreos, crushed

Combine the cream cheese, yogurt, powdered sugar, and milk together in a bowl until the mixture is creamy and smooth. Once your ingredients are thoroughly mixed, stir in the crushed Oreos. An (and fun) way to crush the Oreos is to grab a gallon sized Ziploc baggy, toss the cookies inside, seal it nice and tight, and then take a wooden spoon to the bag. Crush those cookies, and crush ‘em good! Whack them with the spoon to your heart’s intent. This is also a good way to let off some steam, I might add. So, anyway, after you have added the crushed cookies to the mixture pour it into popsicle molds. Place the molds in the freezer, and boom you’re done!

I am so excited to try this quick and easy (and frosty) version my favorite midnight snack, Oreos and milk!

XOXO, Chels

Sleeping in late? Buying low-fat foods?  Sipping on fruit juice to get your necessary vitamins?  These all sound healthy, right?  WRONG!  Many “healthy” acts aren’t so healthy after all.  You’d be surprised to find out what healthy acts and items I’m talking about.  Keep on reading to find out how you can live a healthier life!Chelsea Crockett- low fat foods

  • When you’re out to eat, skip the hand sanitizer and go to the bathroom to wash your hands with good old-fashioned soap and water. Hand sanitizer dries out the skin and isn’t as effective as it claims to be.
  • Fruit juice isn’t all it’s cracked up to be. When producers make juice, they remove the skin, which holds most of the nutrients and fiber. Basically, all you’re left with is sugar and added artificial flavors.
  • You might be surprised to find that “catching up on sleep” isn’t actually a good thing. Research shows that those who sleep in for hours on the weekend to make up for a loss of sleep from the week-end up staying up later on Sunday nights resulting in tiredness on Monday. It’s a reoccurring cycle. Instead, try to keep a constant sleeping pattern.
  • Just because something is labeled as low-fat, doesn’t mean it’s low calorie. Many low-fat foods actually have more carbs and grams of sugar to make up for the lack of taste. Instead, eat a healthy portion of the regular food item.
  • Ignoring your sweet tooth sounds like a good idea right? When you’re body craves something you need to give it what it wants. By eating a small piece of dark chocolate, you will get rid of your sweet tooth and even score some healthy antioxidants. If you get rid of all sweets, you may find yourself binge eating cake one night.

It’s so important to always make healthy choices! I hope this helped!

Love you all,

Pancakes are one of my favorite meals to have for breakfast… and what’s better than being a little creative and making them cake batter red velvet pancakes? Since I spend a lot of time on Pinterest, I thought I’d share this delicious recipe I found. Not only is the recipe for the pancakes, but for a cream cheese drizzle as well! Yum!

Chelsea Crockett - PancakesFirst, you need your ingredients: 2 cups of red velvet cake mix, 1 ¼ cup of milk/water, 1 egg, ½ cup of flour, 4 ounces of cream cheese, ½ cup of powdered sugar, 1 teaspoon of vanilla, and 2 tablespoons of milk.

Second, heat your pan or skillet at medium heat. Take a large bowl and whisk the egg and milk together. Then, add in the red velvet cake mix, milk, egg, and flour. Mix together until the batter is completely fluffy. After that, you’re ready to go! Whether you want mini pancakes or big ones, grease the pan with butter or oil before pouring on the batter. Then pour the batter on the pan and wait till a bubble appears to flip. Each side should cook for about a minute. Once the pancakes are done, you’re ready to make the cream cheese drizzle!

This part is simple. Take a smaller bowl and mix together the cream cheese, powdered sugar, vanilla, and milk. Once all ingredients are fully mixed together, pour the drizzle on top of your pancakes. How delicious does that sound :)?

Enjoy! – Chelsea

Whenever I’m hungry, I go straight to the kitchen and snack on some of my favorite fruits and vegetables. Okay okay okay, maybe they’re not my first choice. Usually my stomach is craving some sweets and dessert treats! Something I like to do during my lazy summer days is experiment with some recipes. Here is one in particular that tastes absolutely ahhh-mazing, and with summer coming up, what’s a better time to try it out for yourself?Chelsea Crockett - Pretzel Bark

First off, you’ll need to take a trip to the grocery store and pick up a few ingredients: a 1-pound bag of mini pretzel sticks, you’ll only use about half of the bag, 2 sticks of butter (about one cup), 1 cup of packed light brown sugar, 2 cups of semi-sweet chocolate chips, and sea salt (optional).

Second, preheat the oven to 375 degrees. Cover the bottom of the baking sheet with aluminum foil to avoid the pretzels sticking to it! In a saucepan, over medium heat, mix together to butter and brown sugar. When it starts bubbling, let it sit still for 3 minutes. Then pour the mixture over the pretzels laid out on the baking sheet. Bake it for only 5 minutes then remove and pour the chocolate chips all over the top of the pretzels! Let the dessert cool at room temperature for as long as you like, or as long as you can stand it! Then dig in, YUM!

Enjoy!- Chelsea

Doughnuts are so incredible. But you know what is totally un-incredible about them? Their ingredients! I found a recipe for baked- not fried- cinnamon and sugar doughnuts that is ah-mazing! The best part? You don’t have to feel totally guilty after downing a few of them!

Ingredients

1 egg

¼ cup granulated sugar553123b

1 cup milk, heated to about 115 degrees

1 tablespoon active dry yeast

1 teaspoon salt

2 teaspoon vanilla extract

2½ to 3½ cups unbleached flour, divided, plus more for kneading

1 stick butter cut into cubes

For the cinnamon-sugar coating:

1 stick butter, melted

1 cup sugar + 2 tablespoons cinnamon, mixed together

Instructions

1. In the bowl of your mixer, beat the egg and sugar on medium speed for about 1 minute. Add in the milk, yeast, salt, and vanilla. Turn the mixer to low, and then add in the 2 cups of flour. Attach the dough hook of your mixer and then on medium speed, add the butter one piece at a time until smooth. Reduce the speed to low, and then add the rest of the flour until the dough sticks to the hook and pulls away from the sides of the bowl. The dough should be soft and moist, but not sticky.

2. Lay the dough out on to a floured surface and knead until smooth. Place in a mixing bowl coated with cooking spray and cover with a damp towel. Let the dough rise until it has doubled in volume, or about 1 hour.

3. Punch down the dough and roll it out to about ½ inch thickness. With biscuit cutters, cut out 3″ circles with 1″ holes. Preheat the oven to 400 degrees. On a baking sheet lined with parchment paper, place the doughnuts 1 inch apart. Cover with plastic wrap and let sit on top of the preheating oven until almost doubled in size, or about 25 minutes.

4. Bake until light golden in color, 5-8 minutes. Dip the hot doughnuts in the melted butter and then coat with the cinnamon and sugar mixture.

Serve your delicious doughnuts immediately, because they are best eaten the same day they are made!

XOXO, Chels

Ingredients:

1 3/4 cup

Oats

3

Egg whites

3/4 cup

Unsweetened cocoa

1/2 cup

Unsweetened applesauce

1 tsp

Vanilla extract

1/2 cup

Plain greek yogurt (or regular plain low fat yogurt)

1/2 tsp

Cream of tartar (or 2 tsp. vinegar)

1 1/2 tsp

Baking powder

1 1/2 tsp

Baking soda

1/4 tsp

Salt

1 cup

Hot water

1/2 cup

Baking stevia OR 1 cup sweetener of choice that measures like sugar1

1/2 cup

Semi-sweet chocolate chips

Tip

Foil cupcake liners, remove the inner paper lining (because paper liners tend to stick to muffins!)

1. Preheat oven to 350 degrees. Line a 12-cup muffin pan with foil cupcake liners, or spray muffin tin with non-stick cooking spray. Set aside.

2. In a blender, mix all of the ingredients together, except for the chocolate chips. Blend until oats are ground and mixture is smooth.

3. Place mixture in a bowl and gently stir in 1/2 of the chocolate chips (set the rest aside). Scoop mixture into prepared muffin pans.

4. Place muffins tins in the oven for 10 minutes.  After 10 minutes, remove muffins from the oven (but don’t shut oven off), and distribute the other half of the chocolate chips on top of each muffin.

5.Place the muffins back into the oven and bake for an additional 2-5 minutes, or until a toothpick comes out clean.

Cool muffins before removing from pan. ENJOY!

                                                                           Hey everyone!

Halloween’s right around the corner, which means bonfires, hayrides, parties, and other festivities are, too!  If you’re hosting (or helping host) a Halloween-themed party, you’re going to need fun and festive treats for your guests to snack on.  Below are a few creative and decorative ideas for yummy foods and snacks!

Chelsea Crockett - Apple PlatterAll candy and sweets aside, fun appetizers are a perfect way to kick off your party.  One of my favorite ideas is a dipping platter for apples.  Get an oval shaped platter and spread an eight ounce tub of cream cheese in the middle of the platter.  Then lay apple slices all around the outer ring of the cream cheese!  Drizzle some caramel sauce on top and bon appetite!

The most important part of Chelsea Crockett - Ghost PretzelsHalloween, is the sweets!  Anything dipped in chocolate is perfect for me, so this treat is a cute idea and so yummy!  Take a bunch of pretzels sticks and dip about one third of each them into white chocolate.  Then, take black icing and draw little faces on them for the resemblance of ghosts!  Some stores even sell little icing pens to make it a lot easier for decorating.

Another dessert idea is to make spider cupcakes.  Ice your cupcakes with chocolate icing and use strips of black licorice for legs.  Small marshmallows with a dot of black icing in the middle will work for eyes.  It’s a silly way to celebrate the season.  Enjoy this time of year with family, friends, and the tasty treats that come with it!

                                                Happy Halloween!
