Watermelon + coconut water = the most refreshing combination ever! This summer I have been seeking out all kinds of refreshing beverages because of the sweltering heat in Illinois. Luckily I stumbled across an article on Lauren Conrad’s website that clued me in on watermelon coconut water! Not only is it mega refreshing, it is also good for you! Here is how you can whip yourself up a batch.

Ingredients:

  • 2 cups cubed chilled watermelon
  • 1 cup coconut water400834_390257437749600_1431811470_n
  • 1 large lemon
  • Ice cubes

Add all the ingredients together in a blender. If your watermelon is really sweet, adding a generous amount of freshly squeezed lemon boosts the flavor! If you like taste of coconut, add more coconut water to this. Blend all of the ingredients until smooth. Take a sip and see what you think! I adjusted the recipe a bit to fit the sweetness of my watermelon, and you may need to as well.

This drink has a beachy flare to it, so if you are craving a day at the beach but live nowhere near one, then this delicious delicacy will make you think you are somewhere with your toes in the sand. 😉

When you were little did you devour fruit roll ups in 2.5 seconds like I did? Those were the glory days, when you didn’t have to worry about how much sugar and terrible ingredients were in those sweet rolls of tangy goodness. Well, now I know how to make my very own fruit roll ups from actual fruit that I don’t feel bad about devouring!download (1)

Ingredients:

  • 8 cups of cubed watermelon
  • 2/3 cup granulated sugar

Directions:

Line two baking sheets with silicone baking sheets or parchment paper and preheat the oven to 170 degrees. Puree the watermelon and drain the juice as much as you can. Press the juice out with paper towels or anything that works to get the juice out. Combine the drained watermelon with the sugar and blend it together to make a smooth mixture. Divide the watermelon puree between the 2 pans and spread it in an even layer. Bake it for 3 hours, rotating the pans 180 degrees and swapping rack levels every hour. Transfer the cooked fruit rolls onto cutting boards so you can cut them like you want, and then store them in an air tight container!

These snacks are the perfect sweet on-the, chewey treat!

Summers in the Midwest, where I live, are sweltering. Spring can be quite warm, too! My favorite way to cool down in the summer is with a big glass of ice cold sweet tea. Another refreshing summer snack is watermelon. Combine the two and you have the ultimate summer cool-down treat. Here is how to make this minty magical concoction!

Ingredients:

1 cup water

Watermelon Sweet Tea

Watermelon Sweet Tea

1 cup sugar

3-4 nice leafy stems of mint

1 family sized tea bag

7 cups boiling water

A few more leafy mint stems

3 pound piece of fresh watermelon

First, we make the syrup. Place 1 cup of water and 1 cup of sugar in a saucepan over medium heat. Stir until the sugar dissolves then bring to a boil. Boil the mixture for 3 minutes, then remove from the heat. Drop in the mint leaves and push them down into the syrup and then allow it to cool. When it is cool, pour it into an airtight jar and refrigerate.

Now we make the tea. Place the tea bag and mint stems in a large pitcher. Pour over the boiling water and leave to steep for 8 – 10 minutes until the tea is a dark amber color. Remove and throw away the tea bag and the mint. Leave to cool.

Cut the watermelon into cubes and puree it in a blender until smooth. Pour your puree into a strainer and gently push the pulp so you can get the juice from it. You should have about 3 cups of juice after you do this. Refrigerate the juice until the tea is cooled.

In a pitcher mix the tea and the watermelon juice and stir well, then add in the mint simple syrup to taste.

Sounds delightfully refreshing!

Do you get nasty headaches? I know that when I have a headache, it always seems to put a damper on my day. What I DIDN’T know is that there are actually foods that you can eat that will help fight your headache. Ill show em to you so you can save your noggin some hurtin!cherries

  1. Cherries: Cherries actually have antioxidants that help your body put a shield up to block pain!
  2. Spinach: Spinach is literally the world’s best superfood. Vitamin B2, which is found in spinach, has a relaxing effect on your brain, which will ease the pain your body is experiences. Want a headache free day? Have spinach for lunch.
  3. Bananas: Bananas contain vitamin B6, which is a kick in the butt to headaches! The vitamin also increases the levels of serotonin in your brain, which acts as an antidepressant, and also lowers the amount of pain your body is feeling.
  4. Watermelon: One of the biggest causes of headaches is dehydration. Next time you are hungry and also have a headache, grab a slice of watermelon before you pop a Tylenol. Watermelon is a food rich in water, so it will help to quickly rehydrate your body.

Headaches are no bueno, but knowing that I can eat to get rid of them is definitely a plus! J
